All my life, I believed the best fish curries in the world were made only at home.

I grew up eating three versions - my mother’s, my mom’s sister and my grandmother’s. All completely different, yet somehow all screamed Salunkhes.

And yes, rather naughtily, we ranked them 1st, 2nd and 3rd almost every week. 😄

Then I stumbled upon Fish Moilee.

It blew my mind.

Probably one of the simplest, cleanest fish curries I had ever tasted. For years, it became almost a daily staple, so much so that, for a while, I forgot the louder curries I grew up with.

So this is what I do as a chef: take that memory of Moilee and turn it into a steamed egg custard — Chawanmushi.

If you ever find this dish on one of my menus, order it only if you can handle nude fish flavours — nowhere to hide, nothing screaming for attention. Just fish, coconut, spice and restraint.

My mind is still in last weekend after @ttox_india . The amount of things that happened as still a dream come true for me.

There was the first physical copy of @shuffledmagazine

From playing at @puttheplayerfirst 's table to hosting and even covering for him.

and a lot more

This TTOX was an adventure of its own.

I turned 31 a few days ago and I didn’t post anything.

There was no countdown, birthday dump or trying to find the perfect words for a moment I hadn’t fully understood yet.

I think I just wanted to sit with it because this year didn’t arrive with clarity or big realizations.

I feel like I’m learning how to move through things instead of rushing to fix them. Honestly, it’s a breath of fresh air to let moments pass through me…without needing to capture or explain all of them.

There’s something new about this phase. Less urgency and trying to prove something. It’s just more trust in myself, timing and the idea that I don’t have to have everything figured out to still be moving forward.

31 doesn’t feel like a milestone, it feels like a shift in pace - slower, softer but still going somewhere. For the first time in a while, that feels enough.
