A LITTLE TASTE OF TEXAS IN CHIBA, JAPAN! 🇺🇸🤠🇯🇵

🏍️ Our SRD-J motorcycle adventure took us to T’s BBQ in Chiba, Japan, and this stop was something special!

First off, the BBQ was absolutely delicious! 🍖🔥 The smoky flavors took me straight back to Texas!

But here’s where the story gets even better…

The pitmaster actually learned the art of smoking BBQ in Aledo, Texas, just down the road from my old stomping grounds around Springtown! 🤯

And as if that wasn’t enough Texas for one day, we even met some folks from Fort Worth! 😂

What are the odds? Riding Harleys through the Japanese countryside, eating authentic Texas-style BBQ, and running into people from back home!

For a moment, Chiba felt a whole lot like North Texas. 🤠

From Springtown to Aledo, Fort Worth to Chiba… Texas connections everywhere! 🇺🇸🇯🇵

Great BBQ, great people, and great riding. That’s what SRD-J adventures are all about!

72 hours. Prime Briskets. 🔥🤤

I grew up in a Gujarati vegetarian household in Chicago and didn’t eat meat until a high school team dinner, by accident. After that I never looked back. (Sorry mom)

Now I work in cybersecurity by day, and on weekends I’m babysitting a smoker and bringing the ideas in my head to life. Nobody taught me Texas craft BBQ. I taught myself, then pointed it at the flavors I grew up on, and every recipe is measured to the gram. Dhaba BBQ is named after the roadside food stalls in India.

Here’s the brisket before it gets chopped: a dark peppery bark, a deep smoke ring, and a fat cap rendered all the way down.

🧂 Dry brine: 24 hours
🪵 Low and slow at 225°: 24 hours (since I don’t wrap)
😴 Uber long rest: 24 hours

I trim it minimally on purpose. We chop ours, so all that rendered fat melts into every bite.

Tomorrow it gets slathered in our butter tikka, aka crack sauce, plus Jalebi Pork Belly Burnt Ends and Tandoori Pulled Pork make their debut! 🇮🇳🤝🔥

Bring your appetites!
