Chef Will Harris brings @denvermusselclub to @upnxtden at @bear_leek every Sunday in June.

Having grown up on both the East and West Coasts, @chefwillharris draws inspiration from the ingredients, flavors, and food cultures of each. His cooking emphasizes clean flavors and sustainably sourced seafood, allowing exceptional ingredients to speak for themselves.

One of my favorite bites was the Mussel Escabeche Toast. Mussels were layered over toasted @hearthdenver sourdough with melted and charred leek, pickled peppers, anchovy, and aioli.

The @seremonifish Red Snapper with rhubarb, basil, and watermelon leche de tigre tasted exactly how I imagine summer should taste: bright, refreshing, and playful.

The mussels, unsurprisingly, are complete all stars. Rather than relying on the ubiquitous PEI mussels found on many menus, Chef Will sources larger, sustainably farmed Dutch-style mussels from sixth-generation, family-owned @hollanderanddekoning in Maine, reflecting the environmental ethos at the heart of Denver Mussel Club's mission. Mussels are among the most sustainable forms of seafood production, requiring no feed inputs while naturally helping to filter and improve water quality.

I thoroughly enjoyed the Dijon Blue Mussels. Gorgonzola, sauerkraut, and a touch of cream created a broth that felt rich without becoming heavy. Thankfully, @hearthdenver bread accompanies the dish, because leaving any of that broth behind would be a mistake.

Dessert ended the meal on a sweet note with a Lemon Posset topped with toasted meringue and seafoam candy carrying notes of honey. A white chocolate ganache made with an upcycled chocolate alternative from @shinebev2bar, founded by @sandonbroto, provided a thoughtful finish that echoed the sustainability-minded approach woven throughout the menu.

Thoughtful seafood, vibrant coastal flavors, and a dining experience designed to bring people together around the table.

Sunday, May 31st, is the last day to experience @upnxtden's @freehandprovisions restaurant takeover at @bear_leek!

Up NXT is an 8-month incubator program where emerging chefs take over the BearLeek kitchen on Sundays for month-long residencies. This month, Chef David Arnold has been bringing an intimate, seasonal tasting experience rooted in thoughtful simplicity, creative exploration, and a deep connection to local ingredients.

What began as a way for Chef David to support farms and utilize excess produce has grown into pop-ups and communal dining experiences designed to spark curiosity, invite play, and bring people together around the table.

Follow @upnxtden and reserve your seat via the link in their bio to experience Chef David Arnold’s residency!
