New in Legazpi Village, Makati City: @restaurant.sault, a contemporary European restaurant. Restaurant Sault gets its name from the phrase “salt of the earth” which the team has lovingly adapted as “soul of the earth”. This guiding perspective colours every inch of the Sault experience: the minimalist design, parts of which a literal hands-on project for owners Pam and Geronimo Begre; the artisanal wares, which trade uniformity for personality; and the European cuisine, which bows to the seasons and the elements—most notably, fire. At the helm of the kitchen is executive chef/owner Raphael Dimarucut (@raphdimarucut), who you may recognise from his time at @metizresto. Soon after his exit, he staged at @restaurantjordnaer in Copenhagen and @theharborhouseinn in California. Dimarucut delivers bold, high-impact flavours with items like a lazy ravioli with mushroom ragu and chicken liver pâté, sourdough folded with housemade XO sauce, and grilled octopus with octopus jus and roasted yeast emulsion. But he also balances this intensity with matured restraint in mains like the A5 Wagyu rib-eye served with smoked olives or the house-aged duck breast finished over the embers for a glass-skin finish. And for dessert? A medley of peas, onion peel, cauliflower and carrot that gives us a glimpse into the kitchen’s daring ideas. Across the hall, you’ll find @freaquency.mnl — the cosy lounge primed for apéro, post-dinner drinks or more relaxed gatherings. Envisioned as a creative space, it doubles as an art gallery, showcasing the works of local artists. Now on display: artwork by Bjorn Calleja (@osongkalye). There’s a new wave of new generation chefs returning to the country to open their own restaurants after working in prestigious kitchens abroad, helping make the Philippines into a premier culinary destination. Such is Chef Raph Dimarucut of the brand spanking new, @restaurant.sault. Having worked in Michelin kitchens in the US and Denmark, he gave up an opportunity in Copenhagen to open Sault. And that’s a great decision for him and good break for all of us who love dining out in the Manila scene. Honestly, it’s a kind of place so beautiful you want to gatekeep.
