Day 1 in Orlando 🇺🇸✨

Day one consisted of the usual Orlando essentials, a trip to Publix and Target to stock up the villa! We won’t go into too much detail about the cost, but let’s just say… it was expensive!! 💸

Once the shopping was finally done, it was time to relax and make the most of the villa. A few hours spent around the pool while @robceats cooked up burgers for lunch 🍔 — the perfect way to recharge after the morning’s retail marathon!

Then, to finish off our first day, we headed to SeaWorld for an evening of entertainment. 🎢✨ We were lucky enough to catch this spectacular show, which was absolutely fantastic and the perfect way to end our first day in Orlando. 🌟

A pretty great start to the holiday! ❤️🇺🇸

🐮ANGUS & OINK 🐷 SIZZLEFEST 2022 🪓

Who remembers year two when we welcomed UK BBQ Royalty the @angusandoink team! With Scott and Sue @sue_stoneman on stage and Malissa @mrsoink and Bekah @hungry_0ink keeping the party going and smashing the axe throwing!

Let’s not forget Neil aka @griller_guerrilla winning the hot wing challenge representing team A&O. We also had @edge_bbq & @robceats on the Weber stand that year. A full A&O takeover! Pretty sure our lad @meat_fire_whisky was kicking about somewhere too no doubt in some A&O merch!!

These are the kind of memories that keep us going year after year.

Creamy, buttery mash ✅
Fall-apart beef rib that would make grown men greet ✅
Gravy so deep and intense it nearly claimed council tax ✅
Home-pickled onions for that pure zing ✅

Inspired by Rob C Eats, SPG on the ribs, left to marinade in the fridge overnight. Quick blast in the air fryer to brown them up, then straight into the slow cooker for an overnight spa session.

For the gravy, I fired in beef stock cubes, a tin of tomatoes, and the secret sauce — Smoke & Flame Chimi Rub. Left it bubbling away till it transformed into a Birria-level potion of pure beefy magic. Reduced it by about 50%, thickened with a wee sprinkle of granules, and boom… flavour levels through the roof.

Served on a bed of creamy mash soft enough to sleep on, topped with my pickled red onions bringing the sharp slap needed to cut through the richness. Genuinely sensational. Comfort food, but with violence.

Cheeseburger. Spring roll. Together at last. 💥🍔➡️🥢

Disney might’ve dreamt it up, but I’ve brought it home and I’m not sorry one bit. Crispy golden wrappers stuffed with beef, cheese, onions and pickles — basically a cheeseburger in disguise. Bite into one and it’s like your local chippy and your favourite burger joint had a secret love child.

Recipe’s below if you fancy making a batch (and yes, they’re dangerously easy). Fry ‘em, bake ‘em, air-fry ‘em — just don’t blame me when you eat the whole plate yourself.

👉 Who’s smashing these first? Tag a mate you’d share them with… or maybe not.

Ingredients:
500g beef mince
1 small onion, finely diced
2 cloves garlic, minced
1 tbsp ketchup (optional)
1 tbsp yellow mustard (optional)
100g cheddar (or American cheese slices), grated or chopped
50g chopped pickles/gherkins
Salt & pepper to taste
1 pack spring roll wrappers
1 beaten egg (for sealing)
Oil for frying

Method:
Cook the beef mince in a pan until browned. Drain excess fat.
Add onion and garlic, cook until softened.
Stir in ketchup, mustard, salt, pepper. Take off the heat.
Mix through cheese and pickles while still warm – it should turn gooey and glorious.
Place a spoonful of filling onto a spring roll wrapper, fold, and seal with egg wash.
Fry in hot oil (about 180°C) until golden and crispy, 3–4 minutes.
Drain on paper towel and serve hot with burger sauce or ketchup.

Tip: Make a batch, freeze before frying, then cook straight from frozen when you need a quick hit of Disney nostalgia

These bad boys were dunked in Reaper Mayo from the Dirty Food Revolution. 🔥🔥🔥
