It was great to have Chef @romaindufour back in Chicago to lead a Modern French Viennoiserie masterclass! 🥐

From the first fold to the final bake, our attendees learned theory and lamination techniques across various recipes to perfect their pastry craft.

This was our final viennoiserie academy class of the year, but you can learn directly from Chef Romain in his online course “The Art of Viennoiserie.” All courses include a workbook and certificate once completed and can be taken at your own pace for mastery.

Sign up for this course and others using the link in bio.

What a Masterclass! 🥖
Two days, countless conversations, hands-on baking, and plenty of inspiration ✨

It was a pleasure welcoming so many bakery professionals to @bernal_bakery for our Masterclass! Participants got to explore the performance of our flours through live demonstrations and interactive workshops.

A huge thank you to our Bakery Chefs @baker_brose and @romaindufour for sharing their expertise during the Bread Making and Viennoiserie workshops, and to our partner @prova_gourmet for helping make this event a success 👏

Most of all, thank you to everyone who joined us! Meeting passionate bakers, exchanging ideas, and sharing French bakery expertise is what these events are all about. 🤝

See you at the next Masterclass!

Baking technique: cross-laminated croissant dough 🥐 with Chef Romain Dufour. Here he uses the technique for ham and cheese croissants with Emmental cheese, ham and Isigny Sainte-Mère fromage blanc. I loved the layering of both a dry, nutty cheese with a creamy one for more velvety texture. Team Savory Croissant, always. 🫶
