Does a long ingredient list make a recipe complicated? Not necessarily. One of the biggest misconceptions about Indian cooking is that it takes forever or requires complicated techniques. Often, it’s the ingredient list, particularly the spices, that makes people hesitate. But here’s the thing: ten or fifteen ingredients don’t necessarily mean ten or fifteen steps. Many dishes come together in just a few straightforward steps, and the same spices can be used across dozens of recipes.
