I Can’t Complain…
…I get to slow-smoke meats everyday for a living
…I get to cook on 1000 gal offsets engineered for the best possible product outcome @mill.scale @primitivepits @mmbbqcompany
…I get to take a raw product, made from this earth, carve it to my preferred shape and size, season it with my own curated spice mix, care for it for hours and hours, until it becomes something completely different, a perfectly rendered object of my affection.
I Can’t Complain…
…I get to recommend to hungry folks what’s the best thing to order based on when they come in…and then see them light up when they take a bite
…I get to feed family, friends, folks feeding their staff, folks celebrating an occasion, a birthday, a sporting event, a holiday, a meal they never knew they needed
…I get to humor those who took the time to read this long 😂
I CAN Complain…
…When it’s below zero days on end starting the fire, takes hours to get the pit up to temp, when the windchill is -20 below
…when the water main broke in front of your business shuttering your business for months…
…when people think your a seasonal business, OR when they don’t want to come to your town because it’s too far or “not safe”, when the think it’s too expensive…

…Full of extremes, full of ups and downs, and at the end of the day, it’s all about you as a person….Do you Hold ‘em? Do you fold ‘em? Or do you ride the lightnin’?
I’m here to tell you, that I’m here to ride the lightnin’ for better or for worse…I love you all, and as long as I can keep Livin’ the Dream..I’m gonna keep on livin’ it!!

As many of you know, for the past 2 years I have spent my actual birthday weekend in Texas cooking & serving at @troubadourfest in Celina.

Well this year, due to a few factors, that isn’t quite the case— but it’s all good!!

Luckily, however, I did find myself very quietly in the Austin area last week and was able to (also, very quietly) sneak a few phenomenal BBQ meals into my schedule with a few friends as a little “early birthday” treat to myself.

@mumfoodsatx — so so so exceptionally good, so so so egregiously underrated and slept on… RUN, don’t walk to Mum on Manor Road.

@kgbbq — my first visit, but a long time coming. And man, was that some interesting food and impressive flavors, just as I anticipated. I will be back.

@leroyandlewis — Very arguably a Top 10 restaurant in the entire universe, and I’ll gladly die on that hill. And please note that I didn’t just say “Top 10 BBQ restaurant”, I said and very much mean “restaurant” of any cuisine, period. Literal sorcery being done there every day.

@franklinbbq — the place that started it all for me and my career in Texas BBQ back 10 years ago, and the “Godfather” of modern Texas BBQ that ignited 90+% of the industry that we see in today’s BBQ world. Shameful as it is to admit, it was first time eating here since January 2016 as a 20 year old kid— but man, was it great to get back in line and have the experience again that started it all for me as my inspiration so long ago.

I had more planned to visit in the coming days, but wasn’t able to make it happen— Lord knows, I’ll be back and I’ll be back soon!

Year 29 for me has been the best of my life so far, and it’s not even close. But I have a gut feeling that year 30 is about to be real, real big👀❤️

And just like that, our first commercial crawfish season is wraps. Incredibly grateful to share something we love with those we love. We’ll have the pot ready for yall in a few months.

In the meantime, we’ll be popping up and serving creative dishes so keep ya eyes peeled and ears open. We coming.

I’ll admit 6/12 isn’t where I wanna be but there were so many other wins in this day and I’m truly blessed to be living out my dreams.

To my team, I’m beyond grateful. But you’ve heard this a million times.
