Join us for an autumn sake tasting at a local temple in Kyoto! 🍶🍁 I’m so excited our event is getting closer! Just 12 guests, five seasonal sake, and a rare chance to spend an afternoon sipping sake in the beautiful surroundings of Butsugen-ji Temple. Today is our co-owner’s birthday! Grab a drink and dedicate it to the one and only… Haidar! Shōjō’s Dojo wouldn’t be here today if it weren’t for the delicious juice made in the 305 by a true 305er. Aside from spreading his knowledge and love for sake and beer, Haidar goes above and beyond to show us that, no matter what hand life deals you, you hold the remote control to the life you want to live! Haidar is a type 1 diabetic and cancer survivor. However, that has never stopped him from doing all the things he loves and more! OUR NIHONSHU COLLABORATION WITH @NISHIYAMA_SAKE_BREWERY IS ON ITS WAY TO MIAMI, FL! If you’re new here… our co-owner Haidar did a Master of Sake internship in Tamba, Hyogo at Nishiyama Shuzo where he lived, worked, and embedded himself fully into all things sake and Japanese culture. The bond created with our Nishiyama family was strong so we decided to brew a collaboration sake on World Sake Day (Oct. 1st) 2025. All of the love and appreciation we both have for sake and each other is in this bottle. ♡                      ꧁ Advance Sake Sommelier ꧂                   ꧁ Sake Sommelier Association ꧂                        ꧁ Hourai Sake Brewery ꧂                                * @sylphhandmade x @sake_hourai × @sakesommeliers * part 3 of my Advance Sake Sommelier course where I wrap the last parts of sake brewing at the Hourai Sake Brewery in Hida~Furukawa at a very cold temperature controlled room, I learn about the different stages of shubo and tasted them as well (highly not advisable because of the acidity but the inquisitive scientist in me couldn't resist) then came the different stages of moromi in huge tanks (water is added and sometimes even cooled from the outside by cascading water on the tank) of course comes my favourite part, which i only discovered on the last day, the lab! i suppose it is good that i didn't discover it on the first day or i would have been stuck there the entire time 🥼🧪 managed to send back some sake lees and explored the places where machinery is needed and where some things are still done by hand such an enjoyable experience~ i always believe in doing what you love and loving what you do, enjoying the process is also part of the adventure cheers~! 🍶 ♡ 飛騨古川にある蓬莱酒造で、日本酒造りの最後の部分を包む上級日本酒ソムリエコースの第3部です 非常に寒い温度管理された部屋で、酒母のさまざまな段階について学び、それらを味わいました(非常に酸性のためにお勧めできませんが、私の中の好奇心旺盛な科学者は抵抗できませんでした) その後、巨大なタンクで醪のさまざまな段階がありまた(水が加えられ、時にはタンクの外部から水を流して冷却されることもあります) 確かに、最終日に発見したばかりの私のお気に入りの部分、研究所があります!初日に発見しなかったのは良いことだと思います。そうでなければ、ずっとそこに閉じ込められていたでしょう 🥼🧪 酒粕を送り返
