Adding in that ‘bao’ factor ;)
Our steamed buns are made using the old dough method, and incorporating lotus root flour to make them extra soft and pillowy.

These buns meet soy smoked pumpkin & super crispy aubergine, with a drizzle of wasabi sansho aioli & our very own secret bao sauce.

We can’t get enough of our smoked pumpkin & tempura aubergine bao, we’re kinda crazy bao it and we’re sure you will be too after trying it ^_^ !

A bright dollop of Mentaiko makes everything better. From traditional Japanese recipes, to western inclusions of this ingredient, it packs a beautiful natural umami flavour to any recipe.

Some of our experiments at Mizu flirtatiously pair Mentaiko with seafood, so you can kiss the ocean while dining with us. Our Mentaiko grilled Scallops & Mentaiko salmon aburi nigiri are some dishes you can to try to experience the same.

In the final part of our @mizuizakaya mini series, Head Mixologist @avantikamalik18 takes us through the exciting new cocktails on Mizu Menu Version 2.0🍹

Avantika described the cocktails as being palatable classics with a Japanese twist in ingenious ways. Whether it’s a Bloody Mary turned Kyoto Mary or their in-house original clarified cocktail, each drink has a special something to offer.

All in all, Mizu Menu Version 2.0 is another step on a journey shared by @samurai_cook @nikhilmenon @avantikamalik18 and their teams towards an izakaya that is recognised by its authenticity and originality - all visible in every dish, dessert and drink we tasted.

Part 2 of our mini @mizuizakaya series looks at the surreal dessert menu by @nikhilmenon

The Ryū is obviously a work of art - literally, as the eye of the dragon is hand painted. The multitude of flavors sing together in each bite, and you'll be left wondering, "What just happened? What did I just taste?" - stunned, in the best way.

Even something as simple as the Strawberry Shiso: you go in expecting a hit of sweet and tangy strawberry, but the first thing that hits you is shiso, a Japanese herb that's not only a palate cleanser but also a treat.

If you're not one to expect showstopping desserts from a place that's known for its ramen and sushi, let Chef Nikhil change everything you think you about about Japanese inspired desserts.

Up next in the series, we look at the Mizu Menu Version 2.0 bar program!

The moment we heard about @mizuizakaya Menu Version 2.0, we knew there was something special waiting to be explored. 🤌

In Part 1 of this mini Mizu series, Chef Lakhan ( @samurai_cook ) sets the tone for what the Mizu Menu Version 2.0 is at its core.

2.0 dishes are inspired from sustainability and seasonality and are about bridging the gap between Japanese food and Indian ingredients in the only way Chef Lakhan knows how - with authenticity.

You can expect dishes like a Hamachi Kama with a shisho chimmichuri & a mayū emulsion - created in an attempt to reduce food waste; vegetarian dishes like the Shio Kombu mushrooms steamed in a salted kombu & dashi caramel butter hold their own in all their deep and decadent glory. Whether it’s swapping yuzu for gondhoraj, or gari (pickled ginger) for locally sourced ambe halad, the magic lies in the details.

Watch out for parts 2 & 3 that take you through Mizu Menu Version 2.0 with desserts and cocktails!

The mighty Pumpkin soup, done the Mizu way.
@samurai_cook embodies the memory of his mentor, Chef Daisuke @dai_sougo with this perfect winter dish. Chef Daisuke would make a sweet version of this dish, for one of the final courses in his Shojin Riyori Kaisaki menu.
This dish is a balance between pumpkin, dashi and coconut. Fresh winter pumpkins lend their sweetness, dashi brings in the umami & coconut milk brings a luxurious texture and an edge of flavour that makes this soup as comforting as a warm hug.

A hidden surprise underneath - our house made red bean mochi dumplings - completes the dish. The sweet red bean mochi filling is made with locally sourced red beans essentially emulating the traditional Japanese Anko bean paste.

This Pumpkin Coconut Dashi soup is one of our favourites, and will definitely leave you wanting more. Happy Slurping 🥣
