So this was for Saturday. I was bed bound so no chance of me spending a cent ❤.

This was for yesterday. I had to top up the electricity which I do for the month on Sunday so that was my only spend, but it was a spend day. Yesterday however I had a no spend that was the first of the months. Two more to go get in there 🎉

Everybody's Curry Fish
Ingredients
1 packet of Aldi skinless cod fillets diced
1 chopped onion
1/2 butternut squash diced
50g red split lentils
1 tin coconut milk
3 tomatoes chopped
300 ml hot water
1 tablespoon olive oil
3 cloves of garlic crushed
1 cm grated ginger
1 teaspoon dried thyme
2 tablespoons of madras curry powder
1/2 teaspoon grounded allspice
1 teaspoon black pepper
Salt to taste.

Method
In a medium heated pan add your onions and ginger and garlic to the oil.
As the onion is getting translucent add your curry powder.
Fry for a few minutes be careful not to burn. Add the tomatoes and butternut squash.
Add the rest of the seasoning and herb
Along with the rest of your water.
Add in the lentils and coconut milk.
Cook for 25 mins until squash and lentils are cooked.

If your vegan or vegetarian when this is cooked your curry is done 😜. Add in your fish and stir through mine was cooked in less than 5 mins.

For rice a tip I was given years ago by me Julie 🤣. Double the liquid to the rice a bit of salt. Wash you rice lads. If your hob is electric bring it to the boil for 5 mins then turn if off. If you on gas bring to the boil then turn it right down .
This served 4 people.
Price per plate with fish .83 cent
Without fish 46 cent.
