POSTS STORIES REELS TAGGED

We decided to do our sparkling wines a little differently than last year, our first doing any sparkling wines. We found that some folks were ‘freaked out’ with the fact that they were pretty ‘cloudy’ - the result of primary fermentation finishing in bottle and extra lees left in during the hand bottling.

Many choose to make them in the style we did last year - and some choose to ‘disgorge’ the wines after they’ve completed their fermentation, removing all of the ‘solids’ and topping the bottles off with clear wine. It’s not a ‘standard’ way to make these wines, but many have adopted this method to make their wines ‘clearer’, more ‘consistent’, and more sellable.

We decided to take a different route this year - and were encouraged to do so by @rockets_red_wines , who have taken the approach we decided to do in their fantastic sparkling wines over the past few years.

The first picture shows what we did - we took the wine - in this case a new variety for us, Ugni Blanc - and we did a rough filtration down to about 5 microns. The glass on the left is what the wine looked like before filtration and the glass on the right after it was completed. As you can see, there is a slight haziness due to suspended CO2 and still some small particulates that still remain in the wine. We do not filter it any finer because we do not want to filter out any of the yeast - they still need to convert the sugar that remains in the wine to create the bubbles.

And the last video ago shows our daughter visiting Larry as he and the crew finished the hand bottling process.

We were so encouraged by the response to our first two sparkling wines in 2025 - Chenin Blanc and Cab Franc Rose - that we’ve decided to hopefully do 3 this year! And 2 of them are now in bottle!

And thanks to @sapienwine and @agnewrebecca for helping out!

Some of the most memorable wines I’ve ever tasted weren’t the ones everyone was going on about.
They came from places I’d never expected, from producers and varietals I’d never even heard of. That’s why I was so excited to sit down for this interview with Jason Scrymgeour. If you’ve ever wondered what you’re missing beyond the usual labels, I think you’ll enjoy this conversation. Link in bio. I’d love to hear which hidden gems you’ve discovered. 🍷
