RED VELVET & WHITE CHOCOLATE COOKIES

Ingredients

125g unsalted butter, softened 100g light brown sugar 75g white granulated sugar 1 tsp vanilla extract 1 egg 1 tsp red food colouring
265g plain flour 15g cocoa powder 1½ tsp baking powder ½ tsp bicarbonate of soda ½ tsp sea salt
300g white chocolate chips or chopped white chocolate

Method

1. In a large bowl, cream together the butter, light brown sugar, white sugar, and vanilla extract until smooth.
2. Add the egg and red food colouring, then mix until fully combined.
3. Add the flour, cocoa powder, baking powder, bicarbonate of soda, and sea salt. Mix until a soft cookie dough forms.
4. Fold in the white chocolate chips or chopped chocolate until evenly distributed throughout the dough.
5. Roll the dough into balls and place them in the freezer for at least 30 minutes, or refrigerate for 1 hour.
6. While the dough chills, preheat the oven to:
• 180°C Fan (recommended)
• 200°C Conventional Oven
7. If your oven tends to run hot, reduce the temperature to 160–170°C.
8. Arrange the chilled cookie dough balls on a lined baking tray, leaving space between each cookie.
9. Bake for 12–14 minutes, or until the edges are set and the centres are still slightly soft.
10. Allow the cookies to cool on the tray for 10 minutes before transferring to a wire rack to cool completely.

Makes: 10-12 cookies, depending on size.

Dressing is yogurt + honey + lime juice + a splash of vinegar + olive oil + black pepper ,
creamy, tangy and so fresh.
Shrimp seasoned with bouillon, black pepper and parsley.
Tossed everything together and called it done. Simple food, real ingredients.
