It’s been a busy couple of weeks with visits to Sydney and then almost a week of working and arty-ing in Tāmaki. I’m so sorry I didn’t manage to catch up with everyone but I’m super glad to see and meet all the people I did.

I had the honour of supporting @lavendrasyd to bring Cooking with Country to life — a seasonal menu experience where Indian ancestral cuisine meets Aboriginal Australian ingredients on Cammeraygal Country. The part that I enjoy the most is when we taste the raw native ingredients before they appear in each dish - finger lime, native pepperberry, saltbush, Davidson plum. Making that connection (as a non chef) really brought the menu to life for me. I’ve learned so much through this process and plan to start cooking with these ingredients myself. Opening night is 10 October, then every Friday through October. Bookings recommended 👇 lavendra.com.au/book So lucky to have met and had the chance to work with @saywhatnathan @buu_gaba @noongar_curator Thank you to everyone to came to our tasting night as well. A naan lands on the table, fragrant with saltbush and lemon myrtle. It’s unmistakably Indian, but its flavours draw from Aboriginal food traditions that have existed for thousands of years. Sydney's Indian restaurant Lavendra (@lavendrasyd) brings this rare fusion in its new seasonal menu 'Cooking with Country'. SBS Spice speaks with owner Inderpreet Singh (@inderpreetsinghminhas) and Wiradjuri creative Nathan "mudyi" Sentance (@saywhatnathan) whose poetry closes the dining experience. Our returning question is: Can Indian food start looking to Country more? Listen now, only on SBS Spice. 🎙️ : Can Indian Food Look to Aboriginal Country?
