When @urbanamericanfarmer climbed into the truck with Ben @heritageseafood at 3:30 AM this Monday, she signed up for an adventure.

By first light, they were selecting each fish on the dock—firm, fresh, and glistening—before carefully packing them in crushed ice for the 180-mile run back to Austin. Through the service entrance at @comedortx, those same cobia fillets landed in Chef Danny’s hands, where the real alchemy begins.

Tonight, you’ll taste the culmination of that journey in our signature Cobia Crudo: paper-thin ribbons of Gulf of Mexico cobia bathed in a broth that marries fiery habanero, sweet bell peppers, lush coconut milk, and a whisper of fennel. It’s a dish that captures every mile of its voyage—bold, bright, and utterly unforgettable.

5 years ago today we opened the doors to @comedortx. A project in downtown Austin, years in the making, led by @williamcball.

Through assembling the strongest team of architects, designers, mill and iron workers, branding experts, restaurant operations professionals, landscapers and more the blacktop space at 5th and Colorado was given a new life.

I have such gratitude for the last 5 years of operations as well as the gift of the experience to help build this restaurant with visionaries in their fields.

Thank you William and @connor__oman for bringing me on to this project.

Thank you to all of our team members past and present for imagining the best restaurant we could create.

Most of all, thank you Austin, and beyond for contuning to visit Comedor as a part of our evolution in this community, we can’t wait to see what the next 5 years brings.
