My attempt on replicating the Cathay lounge dan dan noodles iykyk. Chicken stock, sesame paste, Chinese black vinegar, shaoxing wine, sichuan pepper oil and soy sauce — on my next attempt I’ll add some sugar, minced pork or lard and crushed peanuts. I still really like this one regardless 🤎

One Tray Dinner Parties Series - Episode 3:

Cajun Chicken, chorizo, Potatoes and Salsa Verde

Serves 4

Recipe

Add 4 large skin-on chicken thighs and 5 large potatoes, cut into small cubes, to a roasting tray. Season with 2 tbsp paprika, 3 tbsp oregano, 6 crushed garlic cloves and salt. Add generous glugs of olive oil and toss everything together before adding 1 whole chorizo and 150ml chicken stock.

Roast at 200°C for around 1 hour, until the chicken is cooked through and the potatoes are golden and tender. Every 20 minutes, toss the potatoes and chorizo through the smoky pan juices and baste the chicken.

Meanwhile, make the salsa verde by combining 2 garlic cloves, 1 large handful each of fresh coriander and parsley, 1 red chilli, 2 tbsp red wine vinegar, 25g anchovies along with their oil, and salt to taste. Finely chop everything by hand, or simply blitz in a blender for ease.

Once everything is beautifully roasted, remove the chicken from the tray and give the potatoes and chorizo one final toss through all those gorgeous juices.

Plate up the crispy potatoes and chorizo, nestle the golden chicken thighs on top, and finish with a generous drizzle of fresh salsa verde and a dollop of Dijon mustard on the side.

Never underestimate a really good Caesar.

It’s easy, it’s fast, everybody at the table wants some, and there’s one simple trick that makes it way better: layer everything as you build it.

CLASSIC CAESAR SALAD

WHAT YOU’LL NEED:
• 1 head romaine lettuce
• 5 anchovies
• Juice of 1 lemon
• 3 garlic cloves, minced
• 1 tbsp Dijon mustard
• 2 tbsp Worcestershire sauce
• 1 egg yolk
• 1 cup freshly grated Parmesan
• ¼ cup breadcrumbs
• ¼ cup extra virgin olive oil
• Salt + cracked black pepper

HOW TO MAKE IT:

Add the anchovies, garlic and lemon juice to a bowl and stir well. Add the Dijon, Worcestershire, egg yolk, Parmesan and olive oil. Season with salt and pepper and mix until well combined.

Roughly chop the romaine, then add 5–7 spoonfuls of the Caesar dressing and toss until everything is evenly coated.

Now for the important part: layer it.

Add a layer of dressed romaine to your serving bowl, followed by a generous layer of freshly grated Parmesan and breadcrumbs. Repeat another one or two times until you’ve built the whole salad.

This way, every bite gets lettuce, dressing, Parmesan and crunch instead of all the good stuff sitting on top and sad, soggy lettuce hiding at the bottom.

Finish with a liberal amount of cracked black pepper and get it on the table.

Save this one for the next time you’ve got people coming over. Enjoy, fam! 🤙
