You’ve watched us work through the flavors, textures, molds, freeze dryers, liquid depositing, demolding, equipment failures, facility buildout, and all the problems that come with commercializing something completely new.

That chapter was about proving Yo’s FroYo Bites could be made and sold.

The next chapter is much bigger.

Now we are working toward industrial scale—building the systems, machinery, partnerships, and production capacity needed to reach stores across America, Europe, and the Middle East.

The content is changing because the mission is changing.

You’ve seen us build the product. Now you’re going to see what it takes to build the company.

Every engineering improvement creates another engineering challenge.

Freeze product faster… now you need enough ultra-cold storage to handle the increased output.

Increase your storage capacity… now your demolding process has to keep pace.

Automate the demolding… now your freeze dryers need the capacity to handle everything you’re producing.

Increase your freeze-drying capacity… now your packaging operation has to keep up.

It’s one continuous chain reaction.

You’re never engineering just one machine. You’re engineering an entire manufacturing eco system where every process has to work in harmony with the next.

That’s what we’re trying to do at Yo’s for scaling —overcome one engineering challenge at a time until every part of the process works together as one seamless system. And then we can implement the eco system.

This is the current batch of our Original Tart on the website, and it’s one of the lightest, airiest batches we’ve made.

When you bite into it, think cotton candy—but a little crunchier. Then almost instantly, it melts away and turns into that familiar tart FroYo (frozen yogurt) flavor.

The funny thing is, after more than 10 years of developing these, I still enjoy eating them. That’s probably the best review I can give.

This machine was part of our original production plans at the Rutgers Food Innovation Center in Bridgeton, New Jersey.

We tested commercial production there on one summer day.

The humidity inside the facility was far worse than we expected. Moisture was everywhere, and for freeze-dried FroYo, that changes everything.

That single day led us to make a massive decision: leave the East Coast and move the family to Los Angeles, California.

This machine never became part of our final production story… but it helped shape the journey.

Today, we are finally saying goodbye to it.
