This just in by way of Guadalajara — single-origin beans from @estelar.coffee. Café Estelar prioritizes quality over quantity, sources from small producers, and pay farmers equitably. They are a defining role in the coffee scene in Guadalajara, and we’re honored to be able to bring them to you.

Slow it down with a pour over or grab them off the shelf to enjoy at home. Now available in the café✨

Had such a wonderful time @theoxtailexchange @bok_bar Philly last night. @chewy_gluten you’re the best thank you for giving us all a space to shine and delight in our heritage last night! I had the privilege of having the opportunity to share my mother’s braised goat recipe with the guest last night and it was so fulfilling! Shout out to my momma Angela!

Last week I was lucky enough to have participated in the annual @tales_of_the_cocktail in New Orleans as part of a cohort of food & beverage professionals bringing sustainable, locally sourced, and slow food (@slowfoodusa) principles to their establishments. Thanks to @campariofficial @negroniweek @imbibe & @slowfood_international for their support in putting us all in the same room to glean inspiration from individuals doing cool things in the bar industry across the country. Special thanks to @slowdrinks, @hipstergardener & @slowfoodusa.

Excited to bring all this energy to Newark & @fivecornersnewark

What a week! I am so elated to have received a grant from @slowfoodusa @imbibe & @campariusa to go down to Tales of the Cocktail with such an incredible group of beverage industry comrades! S/o @slowdrinks for bringing us into a new dawn of what forms a beverage program can take🌱

Slow Foods and Slow Drinks was the perfect lens to look at Tales through. So excited to keep exploring, slowly and with care. How can we engage with the ingredients we are using in a way that is environmentally, economically, and socially intentional? We had so many incredible conversations that I am eager to continue to have in my beverage practice about foraging, dirt, olives, procrastination, burn out, and mental health (huge congrats to @axljump for their spirited award for the very important work they are doing)

I fell in love with the ark of taste, so many incredible bar folk, saccharomyces cerevisiae, fermentation, and regenerative agriculture techniques<3 Eager to continue the love affair back home

I was also lucky enough to attend the soft opening for @theriffraffclub , an incredible new concept in NYC by @marblemea and @charlesjoly who I adore<3 It felt so special to be a part of such a wonderful family of supportive folks who have come through Chicago bars. Only would’ve chained one thing, missing @_barkeep_
