Summer’s in full swing, and so naturally, we’ve been keeping our people cool with ice pops! We let the seasons guide us in re-aligning our weekly offerings at local farmers’ markets. At work in our ice pops is the same obsession and craft that goes into making our chocolate. We’re loving figuring out great ways to turn the best of the market into cold treats that will refresh and delight on the hottest of summer days. Peaches grown in Oak Creek and Cottonwood? Plums and corn from Camp Verde? Many of our popular drinks are now also available in ice pop form — even our unique lions mane vanilla cream, using mushrooms grown in Cornville. It may get hot in Arizona, but here in the Verde Valley, there is plenty growing locally to stay cool in tasty wholesome ways. Thank you to everyone who has visited us at the market and enjoyed our ice pops, and especially to local growers who bring your produce to markets, both groups pictured here!

Ceremonial cacao is our newest offering for winter! We are excited to be producing ceremonial-grade drinking chocolate products that feature robust flavors and an equally rich story. Read on to learn a little more!

All ceremonial cacao demands certain rituals of preparation. Ours starts with how the farm washes the beans instead of fermenting them, and concludes with how we lightly roast to develop flavor while also retaining the nutritive properties inherent in a washed bean.

It’s an honor to work with beans prepared following ancient Mesoamerican methods of washing. Our beans are sourced from @revival_cacao, which grows cacao in this manner on a single estate in Tabasco, Mexico. Working with this origin results in a drinking chocolate that is surprisingly vibrant and satisfyingly deep, with notes that are earthy, bitter, astringent, and nutty—chocolate’s original flavor profiles. It’s worth mentioning the ancient Nahuatl word, xocolatl, translates as “bitter water” or “bitter drink”.

Our ceremonial cacao is offered in a coarsely ground form to ensure that making drinking chocolate—with water or your favorite milk—will be a breeze. (You can special order our ceremonial cacao in one-pound blocks if your ritual requires).

We’re looking forward to hearing what you think about our ceremonial cacao, which you can order as a hot drink or in a Mexican mocha, made-to-order every Sunday at #SedonaCommunityFarmersMarket. Also offered as take-home bags in various sizes, available both at the market and online via our website.
