This is our pork belly sisig, made from @creamco_meats sustainably sourced pork from Klingman Family Farms. First we roast the pork in a special mix of seasoning for 4 hours, then we grill it on @binchotanman charcoal. Next it’s cubed and sautéed it with fish sauce, onions, garlic and Thai chili. Then it’s deglazed with sawsawan and plated with a chili-Calamansi aoili and a sprinkle of chives. Chef’s kiss! Sisig originates from Pampanga, traditionally utilizing the face of the pig, such as ears, snout and jowls. We’re stoked to serve our rendition of one of the most addicting pork dishes on the planet! Pair this with the @piri.naturel Riesling to complement the touch of citrus and add a perfect zap of acidity! See you tonight for a taste! #gotyourback
