🐔 Should you wash raw chicken before cooking it? It might seem like the hygienic thing to do, but washing raw chicken can actually make your kitchen less safe. Raw chicken can carry harmful bacteria like Salmonella and Campylobacter. Running it under the tap won’t remove the risk. Instead, it can spread bacteria onto your sink, benchtops and surrounding surfaces. The good news? You don’t need to wash it. You just need to cook it properly. In this episode of Ask the Butcher, Luke explains why washing chicken does more harm than good and how to handle it safely at home. 💬 Do you wash your chicken before cooking it? We’d love to hear your thoughts! 📍 The Lucky Pig Butchery & Smokehouse, Bentleigh. #AskTheButcher #TheLuckyPig #FoodSafety #RawChicken #ButcherTips

Should you prick sausages before cooking? No. 🌭 Pricking sausages lets fat and moisture escape during cooking, leaving you with a drier snag. Keep the casing intact to help keep them juicy. Why do sausages split? Often, the heat is too high. Cook over medium heat, turn regularly and let them cook through steadily. Turn the heat down, champ 😂 I’m Luke, butcher at The Lucky Pig Butchery & Smokehouse in Bentleigh, Melbourne. This week’s Ask the Butcher tackles a BBQ habit worth breaking. Save this for your next BBQ, and leave your next butcher question below 👇 #AskTheButcher #TheLuckyPig #Bentleigh #CookingTips #Sausages

Can pork steaks be pink in the middle? 🐷 Absolutely! One of the biggest misconceptions about pork is that it needs to be cooked until it’s completely white. The truth is, lean pork steaks can be beautifully tender and juicy with a slight blush of pink in the centre, provided they’re cooked to a safe internal temperature. The secret is not overcooking them. For a 2 cm thick pork steak, try this as a starting point: 🥩 6 minutes on the first side 🔥 2 minutes on the second side ⏱️ Rest for 2 minutes before serving Cooking times will vary depending on the cut, heat and thickness, so use a meat thermometer to check doneness. Great Australian pork doesn’t need to be complicated. A good cut, a hot pan and a little care can make all the difference. #AustralianPork #PorkSteaks #CookingTips #AskTheButcher
