One of our ethos here at W hotel is sustainability. How do we achieve it? Well it's not easy with over 200 people coming through our doors every day. However we try our best. In this case we reuse the peels from bananas. Coming straight from our beautiful staff kitchen. We gather these peels in mass. Wash them thoroughly and then we steep them in a heavy dose of sugar for 24 hours. This process gives all the natural oils from banana. Flavour wise think of a heavy and nutty banana bread profile. The drink itself is a little nod to the W Hotel in Bankok. Using one of the more unique flavours - Pandan. Here we have combined the aged flavours of Santa Teresa rum with Manzanilla sherry straight from Port of Leith distillery and of course the aforementioned Banana skin oleo with Pandan infused cream. Which we infuse using sound waves. To finish all of this off we add some fresh lime so we can create what is knows as a clarified milk punch. Come check this 'Protector of our Temple' or better known as the deity Yaksha. Here in W Hotel Edinburgh we focus on locality and sustainability. We extract the best of Scottish story telling in the form of gods, goddesses and creatures. So without further ado I present my entry for this years spicy margarita challenge: In Scottish folklore, a kelpie is a malevolent, shape shifting water spirit, often appearing as a beautiful horse near rivers and lochs. that lures unsuspecting victims to their watery graves. This drink is as deceiving as a Kelpie as it looks calm and subtle but hits you with a twist of heat thanks to the heat coming from scotch bonnet.  Kelpies Fire 45ml Patron Reposado  15ml Faux citrus  5ml Ancho chilli liquor 2.5ml Scotch bonnet turbo tincture 50ml Bell pepper soda Method: Stir Glass: Rocks Decor: Bell pepper and lime salt @whoteledinburgh @glpavanello @ellieraeside #patronspicymargaritachallenge #whoteledinburgh
