Ok, let's talk about #oatmeal for a moment. Now, I know what you're thinking: " But Marissa, why in the world what I want hot cereal now? That's just for Winter time!"
To which I say, " Because of THIS: "Stone Fruit Steel-cut Oats"!! 🤯😋 Grab a bunch of these rockstars of the Summer harvest before they're gone!! #farmersmkts
And with temps now cooling as we ooze into Fall, here are some ideas to inspire:
- Use organic oats. Soak with coconut water (or juiceand a cinnamon stick in a jar in the fridge overnight. I like to make enough to share and have some leftover for the next day. I use a quart-sized jar and cover the grains with liquid by about 2" above.
- After soaking, empty jar contents into a saucepan plus some filtered water for the oats to be like a thick soup.
Add the following to taste: pinch of salt, a bit of nutmeg, fresh grated/crystallized/powdered ginger, a generous amount of turmeric, chopped fresh stone fruits of choice (peach/nectarine/plum/apricot/cherry). I chopped dried apricots because I like that texture and the flavor is a bit more concentrated. I like just a hint of a kick with a pinch of cayenne which is great for the metabolism or a few grinds of black pepper, barely noticeable but adds a lil' sumthin' unexpected.
- Simmer for 5-8 minutes in low to medium heat, stirring occasionally. until tender, adding more liquid as needed to desired consistency.
- Sweeten with #rawhoney and or a bit of blackstrap molasses for a wee dose of iron and some rich, yummy flavor. I also used a bit of a syrup in the fridge that sounded compatible that I picked up at IKEA at some point. Lol Whatever you want to try is up to YOU!
- Serve with a dollop of yogurt, plain or here I used some lemon-flavored; citrus is perfect in this delightful treat of a breakfast.
SOooo good, filling, nourishing, cost-effective; a breakfast that You can feel great about eating or serving-up to others...

P.S. Honestly, don't bother with instant oatmeal: zero nutritional value, converts to mostly sugar w/a wee bit of fiber. Take the time to do it right. It's actually fairly simple with just a bit of prep, and absolutely worth it! You deserve it. 🫵👊💜 #creativecooking

So, maybe like me, you started thinking about what will be on the menu tonight during lunch. LOL Once again, letting the tomatoes speak and dictate dinner direction: #tabouleh and #felafel are going down, perfect light Summer meal! Serve with fresh/warmed? pita bread, Greek #tzatziki and a simple arugula salad. 😋 You can do it tonight, too, SO simple... Making falafel from scratch is very easy to do but a decent quality shortcut (like this mix on sale, couldn't resist) sure helps when you want/need something quick! Or you can omit the pita and go gluten-free with a beautiful bowl of fresh greens.

Also working on some other international items that I happen to have at the moment: sprouting mung beans 'cuz they're AWESOME, going to cook up some #sweetplantain and making Nigerian #zobo for a delicious, healthy and refreshing drink to keep on hand. In the last pic is a hot tip for dealing with these flippin fruit flies: a small dish of red wine is quite the temptation for them. 😏

The world is just so full of fun foods!!! multicultikitchen

Heeeyyy, y'all! Let's make some #gazpacho ! If you haven't had it, give it a chance and if you have had it, try your hand at variations!
I hope that this lil' vid inspires you to explore the world of #chilledsoups, perfect for your Summer menus...
Try a Cucumber Soup made with buttermilk and chives, a surprising Strawberry-Basil Soup, and how 'bout a subtle and sophisticated Honeydew & Mint combo? Endless, I tell ya'!! 😋
Would love your feedback and to hear of your own "chilling" adventures...
Eat well, BE well! 🙏👊🧡

P.S. Good thing my cooking/teaching are better quality than my videography. 🙄(def keeping it REAL here in T.I.K.!) LOL

Happy, peaceful Juneteenth, y'all!! We in TIK are celebrating Black culture as we continue fighting for equality for ALL, working towards ending racism... 💥

In this spirit, a great time was had by all at our "Caribbean Cuisine 101" #creativecookingclass this past Tues. at the beautiful Hope & Main facility as part of Gloria Gemma Foundation's Wellness Programming💗
Another glorious group of fabulous folks made, ate and enjoyed learning about some of the foods from this amazing gold mine of a culture, a wonderful mix of many different flavors and traditions from other parts of the world, especially African. You can find these and other incredible things at our local, Latin and Caribbean markets.
Here are some of the yummy things we made, picks limited by lots of activity so unfortunately no event shots, but here are a few interesting items being prepped for you to be aware of, hopefully finding some edible inspiration... 😋🙏😘

Meet #breadfruit ! A truly versatile food akin to jackfruit. When roasted it actually smells like baking bread. I would describe the mild taste And chewy texture to a mix of mushroom and artichoke, buries someone depending on cooking method.
Google and get some for a good alternative to potatoes!

The essence of #jerksaucefromscratch , made some delicious jerk chicken thighs.

Ajícitos dulces: A mild pepper, key distinctive ingredient in #sofrito in addition to culantro, similar to cilantro but sufficiently distinctive to be worth using it!

Jerk sauce, SO easy to make by putting all the ingredients into a food processor or blender and hitting a button. A nice, easy dinner idea, Best when used as a marinade and great with so many meats and seafood, especially good slathered on a a bird for roasting. And I love it for baked tofu. 🔥

A pickled and piquant slaw, perfect side for your Caribbean meal... I went with red cabbage for pink #piklìz !

Haitian #Pikliz and pineapple!

Making a #hibiscusflower beverage boiling the dried flowers with any number of yummy add-ins like pineapple, bark, orange slices, cinnamon stick, clove...
In Nigeria this is called "zobo", also popular throughout the Caribbean. Soooo tasty, soooo good for you!

Longing for #lasagnelove ? I was! 😋 Here's some inspiration for you, an answer to your homemade hankering...
Go ahead: grab a glass of "vino rosso", rock the classic Italian tunes, roll up your sleeves and invoke the spirit of "la cucina italiana"!

Prep layers:
- using faux beef crumble base here, browned and seasoned with a few veggies
- ricotta-firm tofu blend (great calorie cutter, you'd never know it was in there) with chopped fresh spinach, herbs
- A good pasta sauce, I used a #puttanesca style for more flavor punch.
* Make sure to work with a high quality parmesan and sprinkle that stuff throughout.

Layers:
- sauce, [no-boil] pasta, meat (real or plant-based), pasta, cheese, meat, pasta, REPEAT.
Cover with parchment and foil using toothpick spacers, keeping metal off of the cheese topping and acidic saucy surface.
Bake at 350 for about 45 minutes and when bubbling place under broiler briefly to lightly brown the surface cheese.
"ECCO la cena!" (Here's dinner!)
Serve with a delicious #caesarsalad, so good and easy to make the dressing from scratch.

Nonna would be so proud... 👏😘

"Buon apetito, Amici!"
