POSTS STORIES REELS TAGGED

They open on weekends, announce drops on Instagram and sell out in minutes. Lines form. Some get turned away. And the buzz they create makes them the hottest dining tickets in town.

Pop-up restaurants have ballooned by more than 150% since 2022, and these limited-run businesses are finding their footing in Milwaukee.

From weekend pizza purveyor @ferneyspizza to pick-up doughnut biz @cafebunsuka, fine-dining Filipino spot @sinta.mke to established downtown restaurant @amilindamke, every pop-up has a story to tell, a reason behind launching their temporary businesses and countless lessons learned along the way.

Are pop-ups the new restaurant? Read the story at the link in my bio.

Sinta 🇵🇭 might be one of the most unique dining experiences I’ve had in Milwaukee.

The OG Sinta offering is their 7-course Filipino tasting menu, available as a monthly experience for $130.

For this visit, I got to experience the à la carte menu through their partnership with The Agency, and tried a little bit of everything:

🍑 Ensaladang Talong
🐟 Kinilaw
🥩 Lechon Kawali
🔥 Adobong Baka — easily my favorite
🍐 Sans Rival

The flavors are bold, layered, and unexpected. Every dish brings something different, and that Wagyu short rib was 🔥.

I also tried the Zeus & Dionysus cocktails from The Agency, which fit perfectly with the dark, intimate atmosphere. 🍸

If you want to experience Sinta beyond à la carte, you can pre-book their 5-course food & cocktail Grand Tasting any day of the week. Or, if you prefer, you can make a normal reservation and enjoy the à la carte menu.

Definitely giving date night, intimate dinner, or “I just want to try something different” vibes.

Milwaukee, would you try the monthly 7-course Sinta tasting menu, the 5-course Grand Tasting, or go à la carte? 👀

2026 birthday in Milwaukee
One month later…

I listed some of my favorite restaurants in Milwaukee and enjoy them with friends and family!

Food x friends are the way I celebrate my birthday in the last many, many years lol

Here are my to-go places, it is not in order of preference because each one has a special occasion but it’s all with great food or drinks but in parentheses is my favorite food. There are some more places I like around just follow me to check my favorite spots.

1. Avli @avli (kataifi shrimp)
2. Lupi and Iris @lupiandirismke (go with the Bistecca if you feel hungry….they do have the best fries and wine dinners)
3. Purslane @purslanemke (drinks and walleye falafel)
4. Nakama @nakama.mke (the Omakase but if you can’t get a seat at the countertop, seating at the table with hand roll service is fantastic and the black sesame ice cream is a must-try even after all the hand rolls)
5. Cassis @cassismke (open for lunch, the walleye sandwich is the best option for lunch)
6. Agency @agency.mke (we do drink sometimes too, the dealers’ choice is something you won’t regret!)
7. Sinta @sinta.mke (their special pop-ups or some bite at Agency)
8. Nourish @nourishlakecountry (avocado toast and the cold-pressed juices)
9. Bloom by Andreza @bloombyandreza (cakes and Brazilian finger food) #happystomachbr #milwaukee #milwaukeefood

Sinta- my darling or my love. An homage to Filipino food and a love of the people the culture the food and his wife Katrina. Zach and Katrina have curated a beautiful tasting menu that had drunk pairings at Double Dutch. My favorite bite the SigSig. This isn’t your lumpia and Lachon it’s a gourmet representation of Filipino flavors on the highest level. Bringing art to their menus and plating this was a journey of flavors that can only leave you wanting more. Congrats!!

✨️SINTA✨️

If you've spent time at Agency, chances are you've experienced the magic of Chef Zach @zacharywilliampanoske

Whether it's a thoughtful paired course during a tasting menu, a late night bar snack, or a full-blown @sinta.mke monthly dinner, every dish that leaves his kitchen carries the same level of care, creativity, and attention to detail.

Together, Zach and his wife @katrinapanoske built Sinta from a beautiful idea, into Milwaukee’s most exciting Modern Filipino culinary concepts. It's their deep passion for storytelling, community, hospitality, and deep respect for tradition and innovation that make Sinta truly special. Their dedication to their craft is evident in everything they do.

We're incredibly fortunate that they chose Agency to show off that dedication. What started as a partnership has evolved into a friendship, and our program is better because of it.

We're so proud to work alongside Chef Zach and Chef Katrina and are grateful for their love, care, creativity, and corn dogs 💜

🎆 LONGGANISA CORN DOG 🎇

What could be better than a @sinta.mke corn dog for the holiday weekend? House made longganisa sausage in it's classic nostalgic-packed batter, accompanied with banana ketchup, calamansi aioli, and picked red onions & mustard seed. It's a favorite for a reason.

We will be closed July 4th so that our team can spend the day celebrating with loved ones.

✨MUSHROOM SISIG✨

A perfect pairing for our fourth course.

Roasted king trumpet, sunchoke, dried shiitake, bird’s eye chili, calamansi, soy — grounded beneath a parsnip foam made with coconut milk and ginger. Snap pea oil ties in with the cocktail this dish drew its inspiration from, Dual Reality. It's final touch, charcoal ash and toasted coconut beneath it all.

Layers of varying textures, each just as complex as its next, a reflection of the complexities of our unconscious mind as we dream.

Completely vegan. Absolutely delicious.

Food has a way of bringing people together.
We spent the evening diving into Filipino flavors for the first time with Chef Zach and Katrina at Agency. Getting to sit and chat with a Filipino family vouched for the authenticity made it even better—apparently, we found the “real deal” that tastes just like home.
I love that the more I learn about food, the more I realize how much there is left to discover. Thank you for the wonderful experience!
Please send me a DM if you were seated with the Brazilian couple! I would love to go for a Filipino coffee around Milwaukee.
