everything I made for a fall dinner party 🍂🍗 drop your squash rankings in the comments, I need to know for science 🎃

leaning into cozy fall cooking with a juicy roast chicken, herbs from my garden, and maxxxxxximum squash:

🍗 calabrian chili butter roast chicken - used @ciaosamin’s buttermilk chicken as a base, then rubbed it all over with compound butter made with Calabrian chili paste, preserved lemon, garlic, green onion, and black pepper. finished with a Calabrian chili, roasted garlic & preserved lemon aioli.

🍯 roasted honeynut squash - with sage & thyme from my garden, topped with salsa macha for a little smokiness, crunch, and heat.

🥗 kabocha squash salad - with arugula, goat cheese, candied walnuts, pearl couscous, and caramelized shallot dressing. one of my favorite fall salads that I make every year, and definitely making a comeback for Friendsgiving season!!

🌿 marinated herby beets with labne - because every fall spread needs something bright and tangy to balance out all the richness.

cozy cooking season is the best!!

Continuing my series of pasture raised egg sandwiches made with mayo and microwaved.

This time I used 1/2 tsp @sirkensingtons
Chipotle Mayo and 1/2 tsp my homemade organic mayo. They fluffed up beautifully!

I added garlic and onion powders, @tajinusa seasoning, S&P, uncured bacon, jalapeños, scallions, parsley, and Mexican 4 blend cheese.

Whisk in a small greased ramekin or bowl the egg, mayo, and seasonings until completely blended. Add the veggies and bacon and mix thoroughly. Cover and nuke for 1 1/2 minutes.

Served on toasted medium Kaiser rolls, schmeared with my mayo on one side and Chipotle mayo on the other.

Yummy!

From Diablo sauce to mayo… apparently no packet is safe from becoming a painting anymore 👀🎨

Honestly, I’m kind of loving turning these random everyday things into little pieces of art. Maybe I need to keep this series going? 🥹

I used Safe Catch tuna, added all my favorite ingredients, and of course… had to take a little mom break because Arianna needed a snack 😂

Because that’s mom life you can have a whole recipe going and still have to pause everything for your baby. 😂

Continuing my series of pasture raised egg sandwiches made with mayo and microwaved.

This time I used @sirkensingtons
Chipotle Mayo. The main difference between their mayo and mine (besides the Chipotle) is that I use whole eggs in my mayo and like Kewpie mayo, Sir Kensington uses only yolks in theirs. This makes for a richer flavor than regular mayo.

This made a big difference in the fluffiness of the eggs once cooked. They didn't fluff up like they usually do. Next time I'll use half my mayo and half their mayo.

The flavor was delicious, though! I added garlic and onion powders, @tajinusa seasoning, S&P, uncured bacon, jalapeños, sweet Aloha peppers, scallions, carrots, and Mexican 4 blend cheese.

Whisk eggs, mayo, and seasonings until completely blended. Add the veggies and bacon and mix thoroughly. Place in a greased ramekin or small bowl, cover and nuke for 1 1/2 minutes.

Served on toasted medium Kaiser rolls, schmeared with my mayo.

Yummy!
