It was a beautiful warm night for a dip benefiting the Palm Springs Animal Shelter last night. Our very own Foxie came from the shelter five months ago so we’re happy to support this awesome organization.

It was our last dinner here before finally heading home.

We were then pleasantly surprised to see some long time friends that we have not seen in a while. Shaun and Tung have known me even before Ryan and I got together so it’s well over 20 some years! They split their time between San Francisco (where we met and know each other) and now Puerto Vallarta. It was a great way to end this trip.

Last night we decided to try out a new place for us. It’s been here for some time and people have mentioned it before but this was our first time eating here. We’ve had plenty of Mexican food and tacos 🌮 and needed a different flavor and taste. Thai was perfect! I loved this place!!!! Service was great! Food was even better!!! It was just what we needed and wanted!

I ordered the beef panang curry 🍛 and Ryan had the chicken pad see ew. Delicioso!!!!

We will definitely be back here again!!!!

La Capella is one of our favorite places. What’s not to love about ALL of this?!!!

We even got to have one of the best seats for the nightly fireworks show with the beautiful and iconic Church of Our Lady of Guadalupe as the set for it.

It was a beautiful and splendid dinner with this beautiful loving soul. I love you Mr Ryan Sihapanya-Allen!

In our walk to dinner last night, I heard someone call out my name from across the street! I was so pleasantly surprised to see that it was this handsome sweet man that I’ve known from when we both lived in San Francisco! I love it! He and Wayne have lived here in Puerto Vallarta for a number of years now. I am so happy I got to see him in person! ❤️😘❤️‍🩹🙏🌈👏

Hubby and I didn’t have far to go for dinner. One of our favorite places to eat is Sonorita Olas Atlas. Ryan loves their baked potato with cheese and skirt steak. I had their rib eye taco. Both were really delicious!!! We love it!

Buenos Dias!

Yesterday was another relaxing day at the rooftop pool. We made friends with a sweet young straight couple from Phoenix, AZ the night before but hung out with them some more yesterday. It’s been pretty quiet in town still which is nice.

I read that tourism is just down for PV this year but up for other parts of Mexico 🇲🇽 like Guadalajara. They’re not sure why???

It’s still a wonderful beautiful city with really nice and friendly people. “Pata Salada”

Hubby @forrestryanallen and I took a Mexican cooking class yesterday here in Puerto Vallarta. It was suggested to us by friends (Scott and Kara from the Cathedral City Boys and Girls Club) who saw that we also did a similar cooking class in Barcelona where we learned to make paella.

We were met at Gaby’s restaurant by Chef Julio Castillon, his assistants Aldo and Camelia. Gaby’s restaurant was his mother’s but when she retired, he took over for her. He’s not only a chef but also a lawyer and an official tour guide as well! We taught us about how the locals here in Puerto Vallarta are referred to as “Pata Salada” which translates to “Salty Feet”🦶

I didn’t know this previously but Puerto Vallarta used to be called Puerto Las Peñas. It was renamed Puerto Vallarta after a very important politician, diplomat, lawyer, judge, minister and jurist- Ignacio Luis Vallarta!

Ryan and I got lucky as we were the only ones taking the class yesterday so we got to have his undivided attention. Gaby’s Restaurant is located just down the street from the beautifully famous Church of Our Lady of Guadalupe. You can see it in the background as we cook.

Chef Julio walked us down to the local market to shop for the ingredients we needed for our recipes.

We came back to the restaurant to make pico de gallo con piña, chili 🌶️ chips, ceviche tostadas with black salsa, salsa macha with cranberries, avacado sauce with topochico, handmade tortillas and chicken mole (from scratch) with Mexican Red Rice. It was such a wonderful experience! We highly recommend it! We told Chef Julio we’d bring our friends to do it again the next time.

Look who I ran into yesterday while out and about in Puerto Vallarta?! It’s John Darcy of “The Other John and John” couple I know! 😂 🤣😘🌈👏🙏🎶

It was great running into you down here for the first time John. You’ve always talked me how often you come down here with you boss but now I know it’s true cause I saw you with my own eyes! 👀 😂
