Looks: ghoulish 🧟‍♀️☠️ Tastes: delish 😋 I blended my white bean and veggie stew from earlier this week, because I just love a good mush! But really, this soup is savory, vegetarian, filling and made with wholesome ingredients, recipe below ⤵️
- 4 cups veggie stock
- 4 cups drained white beans (I used butter beans)
- 3 cloves of garlic - 6 carrots
- 6 celery stalks - 1 white onion - 1 bay leaf - 1 tbsp olive oil
- 1 tbsp dried parsley
- 1/2 tsp dried sage
- 1/2 tsp dried thyme
In a food processor, dice onion, garlic, carrot and celery. I chopped all first then did a quick dice in the food processor to get everything into nice little chunks. Hack: you can buy these veggies pre-diced at Trader Joe’s! Add everything to the slow cooker and cook on low for the first hour, until the soup warms. Then crank it up to high for a few hours and enjoy! Recommend blending it 😁

🌴🌺Caribbeans🌺🌴 When my good friend and recipe developer @slopstagramm texted me about her new recipe she calls Caribbean Black Beans (I think she meant Caribbeans) I was like yesss making asap if it takes my mind away from finals and makes me feel like I’m on vaca!! Beans were 10/10, “hot damn they’re good” she says, recipe below ⤵️ perfect if you have an afternoon/evening at home and can keep an eye on them while they cook 👀

Soak dry black beans overnight on the counter (8-12 hours). I used maybe 1.5 cups of beans, totally cover with water. Then cook them with cumin, red pepper, garlic, coconut milk, water (if coconut milk isn’t enough liquid in the pot) and coconut oil. Bring to a boil then simmer with lid on for about 2 hours, stirring consistently until you get the desired texture. Top with cilantro! Makes a HUGE bin of beans to last for dayzzz! Added bonus: I roasted onions (cut in half, drizzle with olive oil s&p, bake until crispy), and three those into the pot! Enjoy!

Nothing but #slop for your feeds, because #finals. We’re nearing the end of the semester, aka “clean out your cabinet” time.. which ended in this mystery creation.. I shall call it Lentil, Split Pea, Bulgur, Roasted Bell Pepper Soup and Spices Sloup (slop soup). Recipe not listed below, recipe listed right there.. threw it all in the slow cooker overnight and voila! Actually tasted pretty good 🤔 My roommates were definitely LOLing as I tried to get a “good angle” for this. I think finals have officially gotten to me..

3 carrots diced
4 celery stalks diced
4 lg cloves of garlic diced
1 bay leaf
4 cups vegetable stock
2-3 cups of water
2 tsp parsley dried
1 tsp thyme dried
Instructions
Chop the carrots, celery, onion and garlic. Throw everything in a large pot or crockpot and cook on low for about 4 hours. I blended mine at the end, because that’s how I like my split peas!

Confession: I love potatoes 🥔Baked, roasted, boiled, fried, sweet.. they are truly a girl’s best spud. Another best spud @slopstagramm sent me @bonappetitmag trick to the perfect roasted, crispy potato. I’ll link the recipe in the comments, but basically ➡️ cut your potatoes, fill your roasting pan with about an inch of water, seal tight with double layered tinfoil, bake high heat 425 until soft.. then remove foil, toss in EVOO, s&p and roast as normal! So perfect 🥔

Grubbin’ tonight on my version of Thai fries 🍟 @basically vegan coconut lentil soup (made with red curry my friend’s brought back from Thailand!), plus the CRISP AF roasted potatoes (will post recipe this week), plus brussels and chutney (didn’t want to leave them out on the parenthesis game). Prepped this all Sunday, soup was super easy to make, recipe on @basically blog, and veggies easy as usual. This combo was so flavorful, definitely recommend! 🔥🔥💥💥

Happy Thanksgiving everyone! 🧡❤️ How to spark a lunchtime conversation 101: Bring lentil soup slop that looks like this, with a carrot that looks like that.. 😂 despite it’s appealing appearance, this lentil soup (add water and heat up for more soup-y consistency) is one of the best I’ve had! Been eating it for lunch and dinner on repeat this week. Recipe by @bitesbymi- check it out! Easy to make and packed with veggies, protein and flavor. Also topped with drum roll please 🥁🥁 slow cooker CARAMELIZED onions!! So, so good. Recipe for those to come. Happy Thursday, so close to the weekend!

Saturday night slop, slippers, (arm shadow🙄) and studying anyone?! Crazyyy night over here! Also what’s crazy is how good this dinner is- leftovers from one of my favorite Dublin restaurants @cornucopia_restaurant- a vegetarian spot that packs so many veggies (that you’ve never even heard of) in their dishes you couldn’t auber-lieve it! Also huge portions- this is leftovers!! I had the baked aubergine stuffed with beets, barely, onion, sliced almonds.. I forgot what else.. with a lemon tahini sauce. You need something to balance out that Guinness right? 🍺
