Gifted collaboration with @slow.sauce -

I’ve been very fortunate to be introduced to the most INSANE oat miso and oat shoyu from @slow.sauce and I had to incorporate them into one of my go to easy meals;

Glazed salmon using the oat miso with ginger, honey, soy and sesame oil with a shoyu dressed spinach salad, smashed sesame cucumber, avocado and a miso sour cream/mayo dressing.

I make a version of this bowl on repeat but never with miso and good HEAVENS will this be flying into the rotation now 👌

Thank you @slow.sauce for the insane sauces - I couldn’t recommend them more.

Is there anything better than an evening filled with delicious food tastings, interesting conversations, and great company? 😋 At last week's Thursday Gathering, we celebrated #WorldFoodDay 2026 with a scrumptious programme (or shall we say menu?):

For starters, a taster of innovative food and drink businesses and showcases of organisations supporting the food industry, including a workshop on Japanese fermentation methods 🥒. Followed by a discourse on counterfeit wine and finding balance between tradition and innovation in Scottish cuisine 🍷. For dessert, a space for informal conversations and new connections – accompanied by some more food tastings, of course! 🥘

A big thank you to our community partner the @edinfooddrinkacademy for helping us put together such an exciting day!

And as always, thank you to our speakers, workshop facilitators, showcasers and attendees!

Next week, we’re shifting the gears to research commercialisation and cracking down on what it takes to go from lab to launch 👉 link in bio!

Our Smoky Oat Shoyu is ON SALE NOW!

We make this delicious liquid by extracting the liquid essence of Sheldrake & Sheldrake Chipotle Hot Sauce and combining it with an organic oat shoyu made in the fermentation house by our sister company, @slow.sauce

The result is a mouth-watering umami liquid that brings a deep, rich tone to anything you add it to – think ‘soy sauce’ with a gentle heat. You can use it wherever you might normally add salt to wake up flavour and add a deeply satisfying dimension to your dishes.

LOAF SMALL FOOD PANTRY

Most people know LOAF for bread, buns and pastries, but from the beginning the idea was always bigger than that.

I wanted to bring together small food producers - whose values align with mine. Cheese, charcuterie, veg, milk, grains, ferments, and other pantry staples all have a place here because supporting good food and the people behind it has always been part of the mission.

The reality is that handmade baking is time and labour intensive, and with the ingredients we work with, carries very small margins. The pantry side should provide a steady passive income. Every pack of cheese, jar or pantry item purchased helps support not only those producers, but the bakery too.

This year has been a big one. We’ve taken on staff, invested in premises - and dared to take our first summer holiday, and whilst injured, worked towards the next stage of LOAF. Like many small businesses, we’re feeling the squeeze of rising costs, and every purchase really does make a difference.

So if you’ve ever wondered whether adding a piece of Isle of Mull cheddar or a pack of Great Glen charcuterie to your order matters, it genuinely does.

We also have a small range of traditional crafts from Wild Croft Skerray and Blushful Handmade, and ethical homewares from Spin and Knit Torrisdale, along with excellent book titles we bought from Cereal Bakery, if you are looking to support local makers through gift choices for Christmas.

Thank you for continuing to support this growing bakery and the small producers behind it.
