Today is one of those gloomy, rainy days, and after getting less than 3 hours of sleep last night, I needed lunch packing to be as easy as possible.

So I made one of my easiest comfort meals, Creamy Boursin Spinach Pasta. No complicated sauce. No long ingredient list. Just a few ingredients and DONE. And honestly, this is exactly what I'm trying to do with school lunches this year. Some days I cook more, some days we reinvent leftovers, and some days we need something that comes together in minutes.

🍝 Easy Creamy Boursin Spinach Pasta!

You’ll need:
Rotini pasta
Boursin cheese
Fresh spinach, chopped
Reserved pasta water
Crushed red chili flakes
Black pepper
Salt, as needed

Cook the rotini according to the package directions and reserve some of that starchy pasta water before draining.
While the pasta is still hot, add the Boursin, chopped spinach, black pepper and chili flakes. Gradually add pasta water and toss until the Boursin melts into a creamy sauce and coats all the pasta. That's it.
Want to make it heartier? Add chicken or shrimp. You can also add a splash of heavy cream for an even richer sauce or a squeeze of lemon juice to brighten everything up.

Also packed:
🥔 Sour cream & onion organic potato chips
🍇 Green grapes
🍓 Mini strawberries
🍫 Chocolate fudge brownie
All packed in our OmieBox UP.

For hot lunches, I preheat the thermos with very hot water while I'm making the pasta, let it sit, empty and dry it, then add the pasta while it's nice and hot. ♨️

And a little heads-up if you've been thinking about an OmieBox or OmieBox UP. OmieLife's Fall Sale is October 6–7 with 20% off OmieBox + UP. My ST10 code won't stack with the sale, so during the sale, using my referral link is the way to go.

We did a little refresh at the front of the store. We invested in new equipment earlier this summer (a commercial oven, standup kitchen freezer, grab and go fridge, ice coffee fridge and a smaller freezer for the shop). These investments are so important and helped us so much this summer with our food program and to bring new products to the shop.

Have a look around at some of the foodie items we carry. Lots of gluten free, vegan and specialty items. Amazing pasta and sauces. New frozen meals. We carry over 50 Nova Scotian brands including honey, cheese, eggs, jams, non alcoholic beverages, coffee, protein cookies, and sodas.

We’re open year round and currently 7 days a week with fresh baking and grab-and-go every day. Monday-Friday 10-6 | weekends 10-5. Can’t wait to see you at the corner.
