CREAMY COCONUT CHICKEN A rich, fragrant coconut chicken dish. INGREDIENTS For the Chicken * 700 g boneless chicken thighs, cut into bite-sized pieces * 1 tsp paprika * 1 tsp curry powder * ½ tsp ground cumin * ½ tsp salt, or to taste * ½ tsp black pepper * 1 tbsp olive oil For the Coconut Sauce * 1 tbsp butter or olive oil * 1 medium onion, finely chopped * 3 garlic cloves, minced * 1 tbsp fresh ginger, grated * 1–2 tsp curry powder * ½ tsp ground turmeric * ½ tsp chilli flakes (optional) * 1 tbsp tomato paste * 400 ml full-fat coconut milk * 100 ml chicken stock * 1 tsp brown sugar or honey (optional) * 1 tbsp fresh lime juice * Salt and black pepper, to taste * Fresh coriander, for garnish METHOD 1. Season the Chicken Place the chicken in a bowl and season with paprika, curry powder, ground cumin, salt, black pepper and olive oil. Mix well to coat evenly. Allow to marinate for 10–15 minutes, if time permits. 2. Sear the Chicken Heat a large frying pan over medium-high heat. Add the seasoned chicken in batches and sear for 3–4 minutes per side until golden brown. Remove from the pan and set aside. The chicken will finish cooking in the sauce. 3. Prepare the Aromatics In the same pan, add the butter or olive oil. Add the chopped onion and sauté for 3–4 minutes until softened. Add the garlic and grated ginger, then cook for another minute until fragrant. 4. Add the Spices Stir in the curry powder, turmeric, chilli flakes and tomato paste. Cook for 1–2 minutes, stirring continuously, to release the flavours of the spices. 5. Make the Coconut Sauce Pour in the coconut milk and chicken stock. Stir well, scraping the bottom of the pan to incorporate the caramelised bits. Add the brown sugar or honey, if using, and season with salt and black pepper to taste. 6. Simmer the Chicken Return the seared chicken to the pan and stir to coat it in the coconut sauce. Reduce the heat to medium-low and simmer gently for 12–15 minutes, or until the chicken is fully cooked and tender. The internal temperature should reach 74°C. If you love a good prawn curry, you NEED to try this one! 🍤🤎 The gravy is so creamy, rich & full of flavour! Honestly, this is the best prawn curry I’ve ever made or tried!🤌🏼 For this recipe, I used my @snappychef induction stove & super light cast iron pot & I loved how beautifully the curry cooked in the pot. It’s perfect for letting all those flavours come together while the gravy develops that rich, creamy consistency. Good cookware really does make a difference in the kitchen! Don’t forget to share it with someone who loves a good prawn curry as much as you do! 🫶🏼 Creamy Prawn Curry 🍤 @naazz.kitchen Ingredients * 800g cleaned & deveined prawns * 2 tbsp butter * 1 tbsp crushed garlic * 1 large onion, finely chopped * 1 tsp mustard seeds * Curry leaves * 1 to 2 tsp Kashmiri chilli powder * 1 tsp salt to taste * 1 tblsp green masala, or less if you prefer it mild * 1 tblsp magic masala * 1 - 2 tsp fish masala * 2 tin tomatoes, blended * 3 tbsp Mini’s Aged Chilli sauce * 3 tbsp Mini’s prawn sauce * Chopped fresh dhania * 1 to 2 sliced green chillies (optional) * 250ml fresh cream Method * Heat butter in a pot, add garlic & prawns & cook until pink.
