Sunday meal prep!

It’s been a while… I finished my PGDA on Monday so time to take a breather!

Next year when I start working I have to start meal prepping because I’m going to live by myself which is super exciting 🤗

This week on the menu:

breakfast:
overnight weetbix:

2 weetbix
1 tbsp chia seeds
1/2 cup plain yoghurt
1/2 grated apple
1 tbsp whey vanilla protein powder
cinnamon

mix the weetbix and chia seeds together with a little bit of milk. Then mix the yogurt, apple and protein powder together and add on top with some cinnamon! then store in the fridge to enjoy the next morning! inspo from @itschenoahill

snacks:
healthy cheesecake:

250 g cottage cheese
1 tbsp cornstarch
2 tbsp whey vanilla protein powder
1/2 cup plain yoghurt
some lemon juice
1/2 grated apple
1 egg

all you have to do is put in a blender and then bake in the oven until brownish at the top and store in the fridge!

quiche:

4 eggs
1/2 cup cottage cheese
1 butternut
1 tomato
1/2 green pepper

Mix all together and you can add whatever you want! bake in the oven until golden!

chocolate chip muffins!

this one I just used a vanilla muffin mix from @snowflake_sa and added some chocolate chips!

lunch:
chicken pasta salad

Pasta, any veggies I used carrots, green pepper and then add some cheese blocks and chicken! The sauce is mayo, tomato sauce and chutney! And spice how you like it!

That’s all for this week hope you enjoy and let me know if you try any of the recipes 🥰

- We were tasked (individually) to create packaging for our mascot in the previous brief.

I decided to create “Iceth’s Snowflake Bakery”.

I created all my own dielines and artwork for the box. Unfortunately because of Iceth’s larger dimensions (30+cm) I had to scale down due to print costs, so it is just a print out of him to size inside the packaging, as well as a @snowflake_sa easy muffin mix

This was amazing to see come to life, as are all the projects!

Apologies for my poorly lit photos!

* 1½ cups warm milk
* 10g instant yeast (1 sachet)
* 4 tablespoons brown sugar
* 3 tablespoons of cocoa powder
* 2 eggs
* 3 tablespoons melted margarine
* A pinch of salt

For the chocolate cinnamon filling:

* 4 tablespoons softened margarine
* 4 tablespoons sugar
* 1 tablespoon ground cinnamon

For the topping:

* Store-bought chocolate fudge frosting
* Chocolate chips for sprinkling 🍫

✨ METHOD

1. In a bowl, combine the flour, instant yeast, brown sugar and salt.
2. Add the warm milk, eggs and melted margarine. Mix until a dough forms.
3. Knead until the dough is smooth and elastic.
4. Cover and leave to rise in a warm place until doubled in size.
5. In a separate bowl, mix the softened margarine, sugar, cinnamon and cocoa powder to make the filling.
6. Roll out the dough into a rectangle and spread the chocolate cinnamon filling evenly over it.
7. Roll the dough tightly into a log and cut into equal-sized rolls.
8. Arrange in a greased baking dish, cover and allow to rise again until puffy.
9. Bake at 180°C for approximately 20–25 minutes, or until cooked through.

The debate? 📻🎶 Music makes the world go round but so does food! And let’s not forget how it makes our sweet tooths do cartwheels until the next bake-off. Couldn’t have done it without you, @snowflake_sa !😋🍰
