Thinking back, looking ➡️

Incredible year but also the most challenging navigating a tuff town as small business. Blessed with opportunities big & small. Just wanted to give thanks. Peace to all the chefs (in & out the pop-up world), who chopped it up/ lent an ear. Ya’ll make the city so dynamic.

Also wanted to give thanks to everyone who has partnered with us, gave us a hand/ space , and let us throw down.

Big thanks to YOU 🫵🏿. For coming through, grabbing food, sharing this experience. It’s a wild city in even wilder times but this food has a lot to say. I’ll see ya’ll next year 🙂‍↕️🇯🇲

Hanger Steak - A super flavorful + popular cut that comes from the belly area of the cow, literally hanging below the diaphragm. Sometimes called a butcher’s steak, this cut has historically been a secret, off-menu type of cut only known + loved by butchers 🥩

Swipe for a Hanger Steak recipe card with instructions on how to prep your steak along with a fresh Chimichurri (courtesy of Atwater’s head butcher, Ernesto).

PRO TIP: Lightly salt your Hanger Steak + allow it to rest on a wire rack in the fridge overnight before you cook it to achieve a better crust when you sear it.

Quick snippets of this past weekend for @luckynickspizza 4yr. (F’d up and forgot a few photos) Felt good to get behind the grill, finally meet some of the best food vendors around, chat it up sip / some saison at one of my favorite places in the city, and work w/ such a solid crew. Inspired f’real, was about to pack this up and become a veneer tech 😬

B back real soon w/ updates for the month!

Getting back to our littles series of staff shoutouts with a super special HAPPY BIRTHDAY POST for Ernesto theBesto! 🎆

Hailing from Fontana, Ernie has been with McCall’s for 5 years and acts as our head butcher in Los Feliz. This guy is a true sculptor of the meats, trimming every steak he touches with an impressive attention to detail that’s hard to come by. Outside of the shop, Ernesto enjoys skateboarding, going to the beach, cooking (big branzino guy), and hanging with his pug named Lola.

PLEASE CLAP! #thankfulforernesto #happybirthdayernesto
