Most of the new openings in Chicago tend to jump on the trendiest cuisines of the moment and promise to elevate them, often in upscale settings that chase the latest design fashions (not by chance, they reproduce like carbon copies in neighborhoods that have often been chastized on this page). I would strongly advise these restaurants to visit Spice by CMB and take notes on what “elevated” really means.

The truth is that nailing the techniques behind traditional recipes never codified in textbooks is no less elevated than the layering of textures and flavors that is, ultimately, the overarching recipe for success followed by those trend-chasers. At Spice by CMB, North-African/Caribbean food is treated with an utter respect for its ingredients, which taste exactly as they are supposed to and still manage to disclose a host of surprises as they build on your palate. The green tomatoes are fried to perfection and wisely paired with a slightly acidic pimento sauce and a bacon jam supplying the umami counterpoint that grandmothers must have discovered long before the concept of umami even had a name. A skilful hand is also required to achieve that spoon-cutting tenderness from the braised oxtail and that velvety texture from the cassava dumplings, which beautifully soak up its luscious sauce. Clearly, in the context of a full meal - which also entailed a decadent shrimp fondue and a rich side of collard greens, I would have welcomed a refreshing savoury dish somewhere along the way. But that would have only been a temporary relief, as any craving for lightness would have been immediately overwhelmed by the Jamaican rum cake with coconut ice cream, which certainly did not economize on sugar and calories, and yet provided the most indulgent and comforting end of the meal.

If on top of the food we add a hospitable service (a free glass of wine for a 15 minute wait for our table? River North/West Loop restaurants, I hope you are still taking notes…) and a simple but harmonious ambience, the conclusion writes itself. Trend-chasers might have waitlists and lightning consultants, but Spice by CMB has the one thing that brings me back: the soul.

The bride envisioned a beautiful backdrop where guests could capture photos and create memorable moments throughout the reception.

The space came with an unexpected challenge, an odd, immovable structure that couldn’t be removed. Instead of letting it become a distraction, we turned the challenge into part of the design.

We transformed the structure into a lush floral backdrop, creating a gorgeous photo moment that felt intentional, elevated, and completely at home within the celebration.

Sometimes, the best design moments come from working with what you have and turning the unexpected into something beautiful.

Described as an Afro Caribbean menu. I think this is in my top 3 visits this year. This a new restaurant and h the online menu doesn’t reflect all menu changes and the fried green tomatoes croquettes seem to be apart of that. Everything was so delicious but my favorite thing was the oxtails. This also was my introduction to Jamaican rum cake and I was so pleased. I was obsessed with the interior. Service was neither exceptional or bad. If you want to switch up and tired of vodka pasta and branzino you should try it! Definitely a breath of fresh air in the Chicago restaurant scene. 8.9/10

I knew if I ever got married, I would intentionally choose small businesses that were owned by people of color, especially Black-owned businesses. Everything came out perfectly.
