Spicy Lemongrass 🌱🍋🫚 Curry Chicken Bake 🐓 |
if you’ve never used LEMONGRASS before, this is your sign.

A tall, tropical, perennial grass that’s highly prized for its distinct citrus aroma and flavor 🥰😍 When crushed or bruised, the plant releases this strong-vibrant lemon like fragrance with hints of ginger and mint 🍋🌱🫚

This plant is a staple that originates in SE Asia but used globally in various different cuisines. 🍃

Ingredients:
1-2lbs chicken legs, cleaned and cut slits
2-3 Tbsp avocado oil @hassy.foods
1 shallot
1 stalk lemongrass
1 clove elephant garlic
1 small knob ginger

1 tbsp onion powder
1 tbsp garlic powder
1 tbsp spicy Thai curry blend @spicetribe
1 1/2 tbsp curry powder
1 tsp salt
1 tsp pepper blend @goldensteer

Sauce:
1 cup chicken broth
2/3 jar of @redboatfishsauce Spicy Vietnamese Lemongrass Curry
1 tbsp @redboatfishsauce fish sauce
1 tsp sugar
3 bay leaves

Instructions:
Clean the chicken, pat dry and cut slits. Use a deep baking pan and add the finely diced shallot, garlic, lemongrass and ginger. Add the chicken on top, drizzle with oil, season well, and drizzle with more oil. Give the chicken a good massage and right into a preheated oven.
Bake for 15 mins 385F
Pour over the sauce, 385F for 45 additional mins; uncovered. Taste the sauce upon removal, add additional/optional tbsp of fish sauce for a little more flavor.

Assemble your plate with a scoop of rice, the chicken, pour over the curry and garnish with parsley or cilantro and fresh sliced scallions. I added sliced 🥒 cucumbers as well for freshness and a little crunch.

These are the families we are advocating for.
Families who lost everything in the December 12th fire and weeks later, are still waiting for real help.

While the city and elected officials have delayed action, CityEats believes in community. We believe in showing up. And when systems failed, we stepped in providing support, dignity, and a glimpse of hope to families navigating unimaginable loss.

But let us be clear: hope is not enough without accountability.

Tomorrow, we will be at City Hall meeting with elected officials making noise, demanding answers, and demanding action. Our families deserve more than sympathy. They deserve solutions, housing stability, and urgency.

We will not stop advocating.
We will not stop showing up.
Because when our community is hurting, we take care of our own.

Thank you to everyone who has helped us provide resources and food to families and individuals that are effected and displaced by this devastating fire.

Easy One Pot Chicken and Potatoes. It's still gloomy here and more rain 🌧 is coming so I'm obviously making another one pot crockpot meal. This one is so easy and flavorful. Minimal prep, only one pot to clean! Comment LINK below to shop my crockpot which is my most used kitchen item. It's on sale this week too!

🍗Ingredients🍗 (serves 4-5)

5-6 Potatoes diced I used Yukon gold
1-2lbs chicken breast or thighs
1 bag frozen broccoli
~1 Tbsp olive oil
3-4 cloves crushed garlic
6-8 thin slices butter
~1 cup shredded cheese your choice
~1 1/2 tsp Spice Tribe California Love
~1 1/2 Paprika
Extra Salt/pepper to taste

🍗Directions🍗

Add potatoes and olive oil to crockpot and season with salt, pepper, crushed garlic and paprika and give a good stir. Next lay chicken on top of potatoes and season with salt and California Love from @spicetribe (which is a mix of chili powder, coriander, cumin, bay leaf) If you don't have the California Love seasoning you can sub 1/2 tsp chili powder and 1/2 tsp cumin and 1/2 bay leaf. Then add butter on top of chicken. Cover and cook on low for 7 hours or high for 4 hours. Add broccoli and season with salt pepper then cover again and cook on high until broccoli is cooked and tender approx. 45 min-1hour. Sprinkle shredded cheese on top and cover again until melted, about 5-7 minutes. Serve and enjoy! 🤗
