@spring_ldn chef @skyegyngell grew up in Australia, where Christmas lunch meant prawns on the barbie, a trio of salads and cold glazed ham. Over 30 years (and two children) in London has acclimatised the chef to a traditional British Christmas.⁣

But, as a pioneer of sustainable cooking, she says that seasonal excess doesn’t have to mean that food waste is inevitable. 🌱⁣

love letter to small grocers 💌

one of the best things to come out of the last few years is the return to small, curated, local grocers and the rejection of the one stop shop (even @walmart is doing small shops now)

at @thesnaxshot, our community belief is curation as a salvation from death by excess —curated grocers are the temples in our religion, where we happily commune and give tribute

what’s beautiful about this return—and I say return because our generation has lost that connection with food that is so inherently human—is that it can serve as a form of healing

healing from indoctrination to overconsumption that started from the moment we watched ad filled- Saturday morning cartoons

as we shed legacy brands, we are on a perpetual discovery quest, trying to find their replacements in our fridges and pantries, supporting small, local, communities and better ecosystems for all

i guess you might find it weird that I’m spilling feelings on a Friday afternoon but it wouldn’t be weirder than how I spent most days, exchanging messages with condiments and overly confident beverages on multiple platforms

anyways, just wanted to say this space celebrates you all, those who like me can spend hours immersed inside these temples, pantry shelves open like open arms welcoming us home, encouraging us to indulge in the beautiful process of discovery

June might just be my favourite month in the kitchen garden: spring vegetables are still in abundance( artichokes, asparagus, peas…) while the first strawberries and raspberries are showing up.

Salad season is officially open too, whether you veer towards a rocket and tomatoes combo or prefer the freshness of shaved fennel, plates are vibrant once again, all we need now is the weather to get better! 🤷‍♀️

What’s in season: May! 🥬🍓☀️

May is a perfect time to eat all the fresh spring vegetables! They are packed with nutrients and fibers to awaken our bodies from winter☀️🥒🥬
Peas are just coming in season, eat them raw in a salad: cut them sideways, mix with some rocket if you desire or fresh spinach shoots and dress in a simple olive oil/ lemon mix. Fresh goat cheese can be crumbled on top too🥗

I love artichokes and asparagus, they are very detoxifying and rich in fibers. For globe artichokes, simply boil them and eat cold, dipping the leaves in a whole grain Dijon mustard dressing, until you get to the 💚 which is the best part. Asparagus can be boiled, steamed( best to retain nutrients) or grilled(best for the green ones).

Elderflower is about to bloom, there so much around you can forage. Pick it at the weekend and make a cordial to last you all year🍹🌸

And of course enjoy the first strawberries 🍓😋

After the success of @spring_to_go’s recent Ledbury Road pop-up we were inspired to share these beautiful illustrations created in collaboration with @skyegyngell for some of Spring To Go’s first products.

Specialising in homegrown produce and fresh, locally-made pantry staples, Spring To Go was a lockdown project that quickly garnered a cult following. After wrapping up their latest pop-up last week, the team @spring_ldn are now busily concocting it’s next iteration.
