"Three Graces" • This is the first original cocktail I did for the opening of @elbalconrooftop . I didn't really know the three sisters who were the owners very well, so I started stalking them on Instagram. One sister was posting about trying to nail the perfect pomegranate martini. Another was posting about how much she loved lychee martinis. The third didn't really like me and wanted nothing to do with me, but she did mention the first time that I met her that she loved chocolate, so that gave me something to work with. I thought about making one cocktail for each of them, but if you know me and my haughty hipster attitude, you can probably imagine how I felt about running a pomegranate, a lychee, and a chocolate martini on an opening menu. Also, I had just taken my daughter to the LA Natural History Museum and loved the giant statue of the Three Graces they have in the rotunda, so there's the name for a typical Austin cocktail (visualized by AI in the second picture). I figured I could probably pull all three of these flavors together easily. The original recipe is as follows: • 3 dashes orange blossom/rose water 50/50 mix • 1.5 oz vodka • 3/4 oz pomegranate juice • 3/4 oz lychee juice • 1/2 oz lemon juice • 1/2 oz cacao nib syrup (50 g toasted cacao nibs per liter of water, that because is then made into a 1.5:1 syrup) After the first week of service, it was clear that this wasn't going to work. Five bottle touches and a bunch of accurate measurements to accomplish during a high volume service is just going to result in a bunch of screwed up cocktails. So, we pivoted. I made a pomegranate and lychee cordial and incorporated the acid into the mix, turning three bottle touches into one. This is that recipe: • 1 L lychee juice • 700 mL pomegranate juice • 12 g citric acid • 8 g malic acid Probably would have been a different recipe if I weren't working with 1.75 L bottles, but whatever, I'm sure you can scale it if you want to. That made the new recipe a lot easier to execute, and definitely carried the integrity of the original. The only thing I don't like about this drink is that the color varies depending on the pomegranate juice. Sláinte
