I do believe that this is my prettiest boule yet! While it wasnt made with a sour dough starter, it incorporates most of the dough techniques used in making a sour dough loaf. I was trying out this new recipe:

Artisan Bread Recipe:
370g water
1 tsp salt
500g bread flour
2g yeast

1. Mix dough
2. Rest dough 30 minutes
3. Complete 4 stretch and folds 30 minutes apart
4. Bulk ferment overnight in fridge
5. Form boule, dust with rice flour and score, then refrigerate until oven has preheated at 450 F. For one hour
6. Bake in a covered Dutch oven for 45 minutes.

After allowing the boule to cool over an hour, I cut it in half and have got to say that I am very pleased. The crumb is nice and even and it will be great for sandwiches and toasting. The crust had snap while not being too thick making the loaf easy to cut with a bread knife . I served it with some leftover Black bean soup I’d made Friday. The bread has a lovely chew! I cant wait to toast some up for tomorrow’s breakfast.

I present tonight’s dinner Winner Winner Spicy Chicken Dinner! This is an adaptation of a Bang Bang skillet Chicken dish I found on Pinterest by I Am Homesteader Amanda Rettke. When I found that Pinterest recipe it had you cook skinless boneless chicken thighs that had a basic chicken spice rub of salt, paprika and pepper on it until done. Then use removed the cooked chicken to rest—while you poured the sauce into the skillet to warm for a few minutes. Then you return the chicken to coat it in the sauce. Here’s how I adapted this recipe. I use bone in skin on chicken legs (2) and chicken wings (4). I rubbed the chicken with the spice rub and then put the legs into my preheated cast iron skillet with 2 tablespoons oil to start cooking first. I cooked the legs for 10 minutes then turned them to cook on the other side. At this time I added the wings. I cooked them another 10 minutes, turned the wings over and cooked for 5 minutes. I removed them from the pan to rest. At this point because I was using cast iron which holds its heat, I turn the burner off, then made my sauce which consisted of Kimchi Mayo, Thai sweet chili sauce, honey and sour cream. This differs from a regular Bang Bang sauce of mayo, sweet chili sauce , honey and sriracha . I poured the sauce into my skillet which had cooled down a little and stirred it for a few minutes to warm it through, then added the chicken back in and stirred to coat it. I served this on a bed of ramen noodles with stir fry veggies on the side. Each serving consisted of one leg and two wings. Hubby gave it 👍👍👍👍👍. Tag me if you make it 😀.

Prepping for Easter Sunday lunch at my younger son’s house. I’m bringing deviled eggs, carrotcake cupcakes and kaiser rolls as my contribution to the feast. My son Kenneth is making pulled pork and there’ll be a myriad of salads and vegetables.
So for the deviled eggs to make them more Easterly, I took the shelled hard boiled eggs, and dyed them using natural food based dyes. The pink ones were made from beet s, the blue ones from red cabbage and the yellow ones from Tumeric. The filling was a mix of the hard boiled eggs yolks, Dijon mustard, diced pickles (diced really really small), lemon juice, mayo, sour cream salt, pepper and garlic powder . I’ll fill the eggs tomorrow after we get to my son’s house.
I’ll post the cupcakes and kaiser rolls under separate posts

A belated birthday present from my Son, DIL, and the Grands. It is the 10 year record of BTS and their journey to becoming what they are today. Written by Myeonseok Kang. It has been translated into English by Anton Hur, Slin Jung, and Claire Richards. I will surely enjoy the over 500 pages of stories of their life as trainees , then as Idols, and as Global Icons.

I made the “One pan Lemon-butter Chicken and Potatoes” from averiecooks.com tonight. I used 2 of the gargantuan chicken breasts I got from my GOGROCERY haul and only 2 russet potatoes for the recipe while keeping to the original recipe for the sauce. I pounded the breasts to even out the thickness after salt/peppering them, then I seared both side of them in ghee along with the potatoes which I cut up into 1” pieces. I then followed the recipe for the sauce ingredients covered the pan and baked it in the oven at 400F for 20 minutes. The chicken breast were not as lemon forward in flavor as I was expecting and a little dry. The potatoes while also not very lemony were good. I think that I may play around with this recipe a bit—use chicken thighs instead of breasts and maybe add lemon zest to the sauce ingredients covered order to build up the lemon flavor. What I loved about this recipe was it was a one pan meal and was easy to put together .

This was our dinner tonight. Cider Glazed Pork Chops, jasmine rice and seasoned green beans.
The Cider Glazed pork chop recipe was a new one for me, but was easy to put together. I tweaked the recipe a bit by adding sautéed onions, mushrooms and a splash of bourbon to the cider glaze. I use a pair of gorgeous bone in pork chops that were 1.5 “ thick. Hubby pronounced the recipe great and left nary a crumb on his plate even gnawing the bone (my bone too) clean. Thank you to Kudos Kitchen for this recipe.

I am again working on making a great sour dough loaf. I have had so much trouble maintaining my starter, but think that i may finally getting a handle on it. Why go to all this trouble to perfect my sour dough when I can just use my instant yeast and make loaves the way I always have? From what I understand, besides giving great flavor, because of the longer ferment times required it actually makes the bread a better choice for my Hubby who has Type II Diabetes. It wont mess with his blood sugar levels as much as the regular instant yeast loaves do. It has everything to do with those long ferment times. Here is the recipe I am trying today. It doesnt have quite as long a fermentation as the overnight recipes, but I wanted to try it so I could have fresh bread for the Chicken Corn Chowder we will have tomorrow in honor of our big snow event. We’re expecting between 4-8 inches by Sunday morning. Easy Same-Day Sourdough Bread Recipe -

This was the smallest Christmas Dinner I’ve ever made. Hubby’s sister Becky who was to come, called this morning to say she wasnt feeling well. Oldest son chose to spend Christmas with his girlfriend since there wasnt available transportation (she’s in a wheelchair) to get her here. We spent Christmas Eve afternoon with our younger son and his family and today they are having a cozy Christmas with her parents. So it was just Hubby and me for dinner. I made a 3lb prime rib roast in the crockpot, twice baked holiday mashed potatoes and a cranberry/apple/spinach salad with a cider vinegar mustard vinegrette and topped with candied pecans and goat cheese. Everything was very tasty! I’ll definitely be making my prime rib roast in a crockpot from now on — it was so easy. I have leftovers a plenty so may not cook again until next week LOL. We were both to full for dessert so we’ll have our winter spiced vanilla pudding (made from scratch) later tonight.
