Every day at my restaurants we look to close food gaps and shorten the distance between the origin of our ingredients and our guests, using us as the “middle man”.
We recently have connected with Jay from @fatdog_shellfish to source hand harvested bay scallops from Great Bay on the Newington, NH side of the bay, and continue to work with Linas from @nhseagrant in the collection of salmon roe (who happen to be friends). Uncured, fresh, and raw, salmon roe from a sustainable hatchery in Franklin, ME. We will then be able to source the fish themselves after roe harvesting is completed.
Using our unique position as a restaurant, and our platform in the public, we are able to get involved in the process and outcomes of these incredible projects. And, ultimately, bring it to you.
I’ve said it before, New England has some of the most diverse and beautiful food sources around, all we have to do is connect the dots.

DOVER, NH — Make the road trip to Topolino @topolinonh, Chef Evan Hennessey’s @evanhennessey new Mediterranean restaurant. 🍋

Named 2026’s James Beard Award @beardfoundation winner for Best Chef: Northeast, Evan @evanhennessey brings his artistry, care for his team, and deep connection to the community into every detail here including the art on the walls.

We tried a lavender mocktail, house-sliced tuna crudo—the night’s special—fresh local mussels, house-made bread, raspberry limoncello, and tiramisu. The food feels personal and intentional: much of it is made in-house, with seasonal local ingredients thoughtfully woven throughout. It’s not just a meal—it’s truly an art.

An amazing opportunity for the teams from @stagesdover and @topolinonh to learn how to break down a whole 420 pound bluefin tuna. Instead of me doing and telling (or doing by myself), they took the knives and saw and I guided. A real teaching and learning experience for us all.
I’m so proud that this is the culture we’re building. Thank you as always Keper for your efforts on the water and helping to keep fish like this local!
And yes, there’s fresh tuna at both restaurants!

This was such an epic adventure, and to capture it all for @nhmagazine by, and with, friends @mikeywejchert @klementovich and my son @kaden.hennessey was beyond incredible. This continues the joining of my two worlds, and I hope this is a sign of things to come for sure. Thanks boys for one hell of a day!

Chef @evanhennessey won Best Chef Northeast by the @beardfoundation in 2026, and his restaurant, @stagesdover is the best place to see why. Located in Dover New Hampshire, just outside Portsmouth, Stages offers the most warm and intimate dining experience you could ever imagine, and his food speaks for itself. Yesterday I was given the absolute honor and privilege of receiving the Key to the City of Dover, NH. I have always believed in the soul and importance of small towns, the life and vibrancy they bring, the community and togetherness they create, and how collectively they make any country special. I do what I do because I believe in it, and to be given this honor by my own hometown feels nothing short of life changing in all the greatest ways!
I’ve always wanted to make a positive impact in the world, see others succeed, create opportunity, and leave it better than I found it. And I’m trying with what I know how to do.
Thank you Mayor Shanahan, Dover City Council, Dover Business Development, my teams at my restaurants, and the entire community of Dover!!!
