Great sushi begins with exceptional rice.

Chef Anthony Esquivel traveled to Niigata, Japan, to visit Rizaemon Farm, where The Den's Uncho Mai Koshihikari rice is grown. In Edomae-style sushi, rice is just as important as the fish. Known as shari, sushi rice requires a precise balance of temperature, texture, and seasoning to complement each cut of fish.

From the rice fields of Japan to our intimate 18-seat omakase counter in Miami Beach, every detail has a purpose.

It fills my heart cup to get to celebrate service excellence across America and the Caribbean.

This week SWAS sessions are based in such a pretty part of South Beach Miami ☀️

The team in session one day one today set the bar high for tomorrow’s sessions. Can’t wait to share more takeaways. Very impressed! 🤩

How much does it cost to spend a perfect day in Miami for 💃🏻🕺🏻?
Here is my perfect day schedule:
-get to #southbeach by noon
-park at #nikkibeachmiami for $30
-get lounge chairs and umbrella at @stantonsobe , two chairs and umbrella were $60 cash or $85 by card instead of $125 at Nikki Beach
-get lunch at @nikkibeachmiami , we got their famous Cesar and seafood pasta 👌🏻was soooo good and loaded with protein, got so full for only $100 😳🫶🏻
-back to hotel to rest and get ready for 💃🏻🕺🏻
-get late night dinner @doubleknot_mia in #wynwood. Even though they were a part of Miami spice and were offering 7 course dinner for only $65, we got a 10 course for $78/person and it was SO MUCH FOOD we couldn’t finish. Final bill with drinks was $200
-got @waymo to @factorytown_ and back for hotel $60
-enjoyed @arminvanbuuren @factorytown_ in VIP section backstage right next to him for $250 for two
-$8 pizza at local shack🍕😭
So $708 not including breakfast and overnight in #miami

Authentic wasabi, freshly grated at The Den. Our chefs use a traditional sharkskin grater, working in gentle circular motions to create a fine, creamy texture and release the wasabi’s fresh aroma and distinctive heat. A small detail with a remarkable role in every bite.

Please note, The Den will be closed October 4–12 for interior updates. We look forward to welcoming you back on October 13.
