The bad thing about these competitions is that the only feedback we get is the score. When I don’t get the score I want, I sure would like to know what I missed. We did enjoy each other’s company and all the wonderful people we met today! We love all y’all! ❤️ @steakcookoffs

Jason and I ventured to Spring Hill, TN to compete in the @steakcookoffs inaugural Whole Hog Cookoff, at the 2026 John Maher Builders Whole Hog Festival benefiting The Well Outreach Food Pantry . What a great contest and festival, for a great cause! The contest consisted of two parts. People's Choice and blind judging. Each team had to supply 250 samples of their whole hog, in whatever way they chose. We chose "The Original Pork Star!"- A liege waffle topped with succulent whole hog, caramelized apple and onion, Thai pepper chutney, and laced with Sweet Addiction sauce. The blind judging had to consist of 3 sections of the hog- shoulder, loin, and ham. Each category was awarded separately. The Grand Champion was awarded to the team with the highest combined total. Glory to God! 2nd People's Choice 2nd Compart Family Farms TN Craft Butcher Whole Hog GRAND CHAMPIONS! We battled A LOT of obstacles at this contest. However, with God all things are possible. As a Chef, we have a motto; MAKE IT HAPPEN! Elizabeth Lipa, Jimmy Driver and the entire The Well Outreach did an outstanding job! To say we are stoked, is an understatement. Thank you to our beautiful wives for allowing us to do this crazy stuff. To tackle a contest like this, it takes an army. We couldn't have done it without our friends, Buck-Lou Buchanan and Todd Morison. Using and teaming up with great brands is of huge importance. THANK YOU! I stopped by Harbor Freight yesterday to pick up some much needed supplies for our steak cookoffs. I got a rolling toolbox for all my seasonings and supplies. I got some magnetic holders and some new legs for Francine (my hitch grill). Thanks to David with the Corner Grocery on Smithville Highway in Silver Point for helping the team out financially. For over five years, I’ve rarely passed that Shell station in the morning without getting a country ham biscuit. Penny makes the best!

I had a slight error in the original post. This is my first SCA Win at the Arlington BBQ Burnout on 10/3/2026 in Arlington, Tennessee. I want to thank Tony and Alicia for all their help setting up and tearing down, as well as agreeing to a few last minute, out-of-process ideas that turned out to be not-so-crazy after all. I want to thank my amazing wife, Carrie, who is always the support I need. I’d like to thank all my other Buccaneers who come to our cookoffs and cheer me on. I’d like to thank Milt Collins for showing me the ropes when I knew nothing about competition steak. Thank you to Michael McDearman for showing me how to temper a steak. I’d like to thank Craig with Que’d Up 615 for the inspiration to change the way I prep on my steak by handing me his practice steak after Friday’s cook. My hitch grill, Francine, who really showed me why I bought her! Special shout out to Brad Christopher with velocityfactoryraceteam789 for his interest in my abilities and spurring a new motivation inside me to reach for the stars! List of things I used and appreciate: Royal Oak Charcoal, Grill Grates, Chef Alarm, S&B Design and Graphics, Ford trucks, the lovely stay we had at Springhill Suites by Marriott in Arlington, and the Ascension Saint Thomas Urgent Care Cookeville in Cookeville, TN for helping me fight off this sinus infection and bronchitis long enough to travel across the state and WIN FIRST PLACE!!!
