Sometimes you have so much faith in a new product, you follow your instincts and reserve not 1 but 2 of it. Such is the case with @rayagrocery latest new product… Palm Sugar.

100% natural Palm Sugar specially made in Thailand from boiled coconut nectar with traditional hand fired coal stove technique given the smoky and caramel flavours that are heavenly.

I had a sample of it yesterday and believe me if I could, I would stay there all day sampling them over and over and over again… but then that would be so rude no?

For those who aren’t familiar with palm sugar, it’s one of the classic ingredient widely used to balance the flavours in Southeast Asian savoury dishes… as well as in desserts like black glutinous rice pudding served with coconut milk.

I’m so excited to start using them on my South East Asian desserts… and I’m chuffed that my family back in Singapore has requested a few packs of these.

Ps: @rayagrocery would you kindly reserve 2 more packets of these for me please? 🙏🏼

Cakers never really stop thinking about their caking commitments even when they’re on holiday.

Thank you to my cake mentor Bethan of @seren_dipitycupcakestewkesbury for organising these ‘top secret thingys’ and having them delivered via special delivery in time for my return from Palermo.

Not saying anything more other than these ‘top secret thingys’ are for a ‘Whoohoooo’ kinda event taking place next week. Patience please yah.

Located by the sea front, with the most interesting interior design, @letermeristorante is certainly a gem in Cefalu.

As you make your way through the restaurant to the outside sitting area, you’ll notice the glass floor… remnants of an ancient spa complex in the historic center.

Service was impeccable, paired with the MOST fantastic dishes. Portions may be small but the flavours huge…layers after layers of sensation complementing each other. Absolutely stunning and easily the best meal we’ve had so far.

🦞 Lobster, foir di latte mozzarella cheese, asparagus, nduja and wild fennel pesto.

🐟 Dentex with Miso, bouillabaisse consommé, sweet potato puree and chard.

I highly recommend a meal in @letermeristorante if you’re in Cefalu, Sicily.
