Denver date nights look different from up here. ✨

High above downtown Denver, @stellarjay_denver is redefining rooftop dining with panoramic skyline views, live-fire cuisine, beautifully crafted cocktails, and an atmosphere that feels effortlessly sophisticated.

Perched atop @populushotel_denver Stellar Jay is one of Denver’s most striking rooftop restaurants, where exceptional cuisine, visionary architecture, and unforgettable ambiance come together.

Under the culinary direction of Executive @chefryanpearson the menu celebrates bold, fire-driven flavors, seasonal ingredients, and an elevated approach to dining.

The setting is equally extraordinary. Developed by @urban.villages founded by visionary entrepreneur Grant McCargo, Populus is an architectural masterpiece designed by the internationally acclaimed Jeanne Gang of @studiogang Inspired by Colorado’s native aspen trees, its sculptural design brings an entirely new perspective to the Denver skyline.

Inside, the stunning interiors by Wildman Chalmers Design create an atmosphere that feels intimate, artistic, and undeniably beautiful. Every detail makes the experience feel intentional.

From golden-hour cocktails overlooking the Rocky Mountains to romantic dinners overlooking the city lights, Stellar Jay delivers one of the most memorable rooftop dining experiences in Denver.

For anyone searching for the best Denver date night restaurants, rooftop bars with a view, romantic dining in downtown Denver, or an unforgettable evening in the Mile High City, this is a destination worth discovering.

A little architecture appreciation, exceptional hospitality, and very good food. What more could you ask for?

@populushotel_denver was such a great stay, from the design details throughout the hotel to the Michelin Key signature service. Pasque and Little Owl did not disappoint, Stellar Jay had the views, and the mocha? Easily one of the best I’ve had. ☕️

The architecture of this hotel feels like a part of the experience, not just the backdrop. The building’s distinctive design, inspired by the shape and texture of an aspen tree, gives it a character that feels both bold and connected to nature.

Denver, you made a pretty good impression.

Chapter Twenty Serving: Rooted & Radiant 🪷🥂✨

27 feels like becoming her… in real life

Not because I wasn’t already her,
but because I’ve been allowing myself to soften into it
to move with intention, to choose what feels good,
to show up more fully in the life I’m creating.

This year, I poured into my well-being, my relationships, and myself. My birthday was simply a reflection of that 🪷

Movement, wellness, laughter,
a little Prosecco 🥂 and a lot of love
surrounded by people who feel like home🏡

I was born on the first day of fall… a season of harvest 🌾
just a little reminder that what’s planted with care will always bloom in its time.
“Let us not grow weary in doing good, for at the proper time we will reap a harvest if we do not give up.” — Galatians 6:9

27 feels like being rooted in who I am
and still allowing myself to evolve.

Soft. Grounded. Glowing.
and celebrating every version of me that got me here 🥂✨

Cheers to 27 💝🥂💫

Fire roaring. Drinks cold. Mountain views for days. Up in the aspen treetops, @stellarjay_denver is where wood-fired flavors and starry nights collide—think shareable plates of wild game and fresh seafood, crafted with love (and zero waste). Table's waiting. Night's calling
