I am Wesley. I am definitely not Nick. In the words of my uncle “Allez Cuisine!” Let the battle begin.

24 hours ago this was cloudy and gross. Bentonite clay clarified it. Bentonite clay has a strong negative charge allowing it to bind to the free floating particles which often have a positive charge, then everything falls to the bottom. It’s a little ying yang action that brings everything into balance. Our differences bring us together, @wesleighfights , and don’t you ever forget it.

Sometimes in life there are two things with a shared nature, a kinship. They are somehow meant to be together, despite apparent differences. At Compass Box, they believe that such is the case, with Scotch Whisky and Calvados. This natural affinity is the foundation of the inspiration for Compass Box Whisky Co. newest release, ‘Affinity’. A cleverly conceived blend of Scotch Whisky and Calvados.
Affinity strikes a great balance of bright, fleshy, fresh apple notes against rich soothing spices. The Calvados seamlessly coalesces with the spicy vanilla and malt notes of the whisky. The blend is composed of whiskies from Craigellachie Distillery in Speyside and a blend of hand selected Highland distilleries, the fruity, XO quality Calvados from Domaine Christian Drouin.

Common logic will tell you that Affinity begs to be paired with a classic Tarte Tatin or a traditional apple pie, arguing that is a fools errand. However, when neither is near, Affinity produces an outstanding interpretation of the Jack Rose Cocktail, as demonstrated here at the eponymous Dining Saloon by the immensely talented @dramby_bixby. 📸: @brianoh11
