Been a big few months since our initial venue update and menu change.
More martini’s than I could’ve imagined, lots of talking shop to great people thanks to @paxmondo.agency , a heap of busy hands behind the scenes to continue growing and a chuffed crew on their results.

With spring arriving, it’ll bring changes to the cocktail offering including exciting seasonal releases from @larkdistillery

As always, martini’s, Tasmanian whisky & freshly shucked oysters available at the bar.
💚🥃

More from Aus! One thing I always find fascinating is how much a landscape can shape flavour. It was so amazing to see this brought to life by travelling through Victoria and Tasmania, visiting distilleries, their settings, and spending time with the people behind them.

Whether wandering around LARK in Tasmania, chatting with Stuart Gregor about Australian bars and drinking culture, or visiting producers including Four Pillars, Killik Rum, Melbourne Gin Company, Marionette, The Gospel Rye and Little Lon, every stop told a slightly different story about place, ingredients and the people bringing them together.

We often talk about spirits through the lens of production techniques, but spending time here reminded me that culture (food is culture!), community and landscape are just as important. Every distillery reflects its surroundings in a different way, and that’s what makes exploring flavour so endlessly fascinating.

Huge thanks to everyone who welcomed us in, shared a dram, came to hear me talk, answered endless questions and gave us a glimpse into what they’re building. Australia continues to be one of the most exciting places in the world to explore, and I already can’t wait to come back! 🦁❤️🐨

GOTHAM AT THE STILL: Gotham, Lark’s pop-up bar for @dark_mofo is staying put, creating a permanent home and connection between Tasmania’s ultimate creative festival and the whisky & spirits industry. The bar now showcases the Classic Collection from Lark, alongside special releases and remarkable archival bottles. But they also have an incredible selection of Tasmanian whiskies and the staff team are equally passionate about sharing the creativity, quality and stories behind them all. It’s just one of several remarkable evolutions as @larkdistillery continues to move forward in this exciting chapter. Stu Gregor’s love for hospitality and connecting to the Tasmanian community and culture is bursting forth, his infectious energy and clarity of thought is palpable. Having @stuartgregor back activating in the drinks industry is pretty bloody exciting, mate. And it feels like the right partnership for @chris.thomson_whisky to reach even higher heights. Here’s to Lark and the song getting cleared, louder and sweeter than ever. #tasmanianhistory #tasmanianwhisky

Yesterday was the launch of @tasmanian.whisky.week 2026. The preeminent yearly whisky festival in all of Australia.

From the wilds of the North West to the cold Deep South the whole state celebrates the very best in the Australian whisky scene.

As part of that celebration yesterday all the pinnacle winners of the @worldwhiskiesawards from Australia came on stage to show the nation where the very best hails from, Tasmania. With over 72% of all the medals awarded to Australian whisky coming out of Tasmania the quality is shining proudly from the southern state.

I myself was honoured to represent @hellyersroaddistillery on stage with so many other industry icons.

Well done to @larkdistillery for hosting a wonderful event and thank you to @quercus_alba for being the master of ceremonies!
