Cooking in the Texas summer heat over an open flame? Yeah, we might be a little crazy.

But whole roasted pig tacos, slow smoked lamb leg, tomahawk steaks, and sides all kissed by the fire is where we feel most at home.

If you want an Austin dinner worth talking about, you know where to find us.

We may have set the beef bar way too high…

When @peakwagyu connected with us to help debut their first A4 Wagyu cow from Takeda Farms in Hokkaido, Japan, we knew it would be something special.

They trusted us to build a seven course dinner around it for their official launch. We showcased various cuts like Zabuton, Ichibo, NY Strip, and the most insanely marbled brisket we’d ever seen. Each bite got the same love and respect the farmers put into raising this animal.

Needless to say, it was one hell of an evening. A4 Wagyu, live fire, and great people gathering around the table.

Thank you again to Peak Wagyu for trusting us, and if you want an experience like this for your next dinner or event in Austin, we’d love to cook for you.

So I had a little situation the other day! I just sharpened a Hinckels Chef knife and decided to polish the bolster and collar on a customer‘s knife. When I tapped the handle on my scotch brite wheel things went from better to worse very quickly. At first I panicked and tried a quick redo which made it worse. After discussing the situation with a few of my Old and New colleagues in the business and sleeping on it overnight, I was able to tackle and fix the handle hopefully to my customer satisfaction. Next off to a little more polishing. DM me for what I did next if you ever run into this situation.

My kitchen slashers are BACK and they are fabulously sharp!! Sent them off to the very fabulous Don at Study The Blade and he worked his magic — 2 of these knives were my grandfather’s and were in rough shape, and now they’re basically reborn!!

There’s something so special about giving heirloom pieces new life. Grandpa’s knives have a whole new chapter ahead.

I’ll be slashing veggies later and it’s going to feel PHENOMENAL.

With a name like Charred, it’s safe to say we love cooking over a live fire.

And we love coming up with unique dishes that highlight the flavor of char and smoke.

This is our Texas Melon Gazpacho with Grilled Vegetables. And yes, it’s as good as it looks.

Adios Bader Ranch. After five amazing years, 50,000 plates of food, and enough memories to last a lifetime we have decided to step away from our Bader Ranch residency to focus on our growing event catering company and brick and mortar concepts.

From sleeping in tents behind the bathrooms when we had nowhere to stay, to washing dishes in a dirt patch in the back, to crying in a walk-in cooler that was just a glorified deer hunting trailer we saw it all.

Hell we even almost blew away once in a tornado.

We’ve all grown in beautiful ways, both in what we do and in family size so it’s simply time to step into the next chapter.

I’ll always appreciate every soul that worked with us, ate with us, danced with us, and shotgunned the occasional beer with us.

We’ll still have some Round Top tricks up our sleeve, they’ll just be in different ways.

Thank you Katy for giving us the chance, we’ll see y’all down the road at the next adventure.

Nick.
