Croissant-making class with my hubs, @ckotchey, was such a fun experience! 🥐❤️

We spent the day at the SUNY Broome Culinary Event Center learning from the talented @maleahfarr and I walked away with a whole new appreciation for the skill, patience, and precision that goes into making laminated pastries. Bakers truly are artists!

Here's what we made:
🥐 Traditional Croissants
🍫 Chocolate & Almond Frangipane Croissants
🍊 Orange Cinnamon Cruffins
🌀 Orange Cinnamon Morning Buns
🍇 Pain aux Raisins (filled with vanilla pastry cream and raisins)
✨ Kouign-Amann

The best part? Everything turned out absolutely delicious! 😍

Eight hours of instruction, rolling, folding, laminating, and baking—and every minute was worth it. I can't wait to put these new skills to work at home!

Have you ever taken a baking class? If so, what did you make?

Our Culinary Arts team had a great showing this weekend at the ACF Northeastern Regional Student Chef of the Year Qualifier in Pittsburgh! 👨‍🍳🔥

🥈 Langdon Sibley earned a Silver Medal for his dish featuring yogurt-marinated game hen breast, braised thigh pastilla, Moroccan vegetables, carrot harissa purée, and red wine reduction.

🥉 David Kennedy earned a Bronze Medal for his stuffed game hen breast with caramelized onion and fennel purée, sautéed spring vegetables, braised leg, and carrot dumpling.

Also representing the team were Coach Victoria Tompkins, CEC and student apprentice Daniel Palmeri, who gained valuable competition experience supporting the team.

Proud of the dedication and hard work from this group! 👏

One of the coolest moments of today’s annual food wars event was having FIVE alumni of our program judging food wars who all now work in or have their own successful restaurant. It’s so cool watching our graduates do big things- and even cooler to show the students that are graduating where they could be in just a few years.

Incredibly proud of our pasta team dominating the competition today by winning peoples choice award AND judges choice award by a landslide. More photos and pictures to come- but overall we are just so thankful for wonderful students who made this event a huge success again! 🙂 🙌🙌

I’m committed to supporting our higher education institutions and our local agriculture markets. Thrilled to announce that @govkathyhochul has signed our legislation that will allow craft beverages being produced at @sunybroomecc labs to be sold at our @sunybroomeculinary & Event Center. This means that students studying and producing beer at the school’s Brew Lab will be able to have their products served to the general public. #localproducts #agriculture
