Test run with HeartBrand Akaushi before Burger Showdown. That fat rendered out and crusted up nice on the flat top. For the competition we blended it with our house-ground brisket. Thank you HeartBrand for backing the event 🔥

Double A Way. San Antonio Made

The 7th annual Burger Showdown has come and gone with 9 local chefs battling it out, each with a burger bite they constructed themselves. Intensely varying creations surrounded me, almost a sensory overload of savory options. There was one with a Pan de Muerto bun, one with pineapple, one with a watermelon aioli... these chefs didn't hold back! At the end of the day though, I could only make my vote once, and the Kahuna Burger from The Clubs at Cordillera Ranch just won me over. The soft bun that they baked themselves was a hit, with each last flavor complimenting one another well.

Thank you again @sutapants/@homegrownchef for having me out at such an amazing event!

Chef James Canter absolutely crushed this dinner. 🔥

James has been one of my favorite Texas chefs for a reason, and tonight was another reminder of exactly why.

The Koreano-Tejano Dinner by Guerrilla Gourmet at The Cherrity Bar was incredible from beginning to end. Every single course hit. No weak dish. No filler. Just thoughtful, creative food with huge flavor and a really smart balance between Korean and Texas/Mexican influences.

The banchan set the tone, the Kimchi Aguachile was killer, the Yukgaejang-Spiced Beef Enchiladas were ridiculous, the Korean-Style Pumpkin Duck delivered, and then the Tres Leches Sheet Cake finished everything exactly the way it should.

What I love about James’ food is that the creativity never gets in the way of the flavor. You can tell there’s thought and technique behind everything, but at the end of the day, it’s just damn good food.

Chef James Canter remains one of my favorite chefs in Texas. Period.

Amazing dinner, Chef. Every course was fantastic. 👏🔥

Checking in on my ferments really anxious to try out my Tejano Jang made with Korean soy beans, pinto beans, Koji seed doenjang, Wangshin smoked soy sauce.
Think of it as a hybrid between a Korean doenjang/ and a Japanese miso with a Texas draw!!
Next to that is my jalapeno-cilantro Dongchimi/baek kimchi hybrid!
I have a few other surprises up my sleeves for the upcoming St Paul Square Dinner Club at the @cherritybar with @sutapants on October 1st.

Chef Kaius of The Chef Kaius Xperience knows a thing or two about a winning burger. He took home the People’s Choice title two years in a row, making him a two-time Burger Showdown champion — and this year, he’s switching sides of the table!

We’re excited to welcome Chef Kaius as an official Burger Showdown 7.0 judge. He knows what it takes to win over a crowd, so chefs… get ready! 🍔🔥
