✨🍫Great Chocolate Showdown Finale: Chapters 3 & 4💜✨

In chapter 3, the judges chose a dessert specifically challenging our baking weaknesses. I was tasked with a marjolaine, a dacquoise-based cake with distinct layers of French buttercream and ganache. The judges challenged me to make a cake known for its simple elegance, and they LOVED the final result, with Chef Steve even saying, “That was one of the best French buttercreams I think I’ve ever had.”

In Chapter 4 was a showpiece dessert conveying the future of our baking. I wanted to tell the judges I wanted to keep growing as a baker and chocolatier, constantly challenging myself while still having fun. I ambitiously chose to build a ringed chocolate tower to display my spin on the childhood classic, peanut butter and jelly. My PB&J bars featured a graham cracker crust, a mix of milk and dark chocolate ganache, a chocolate peanut butter mousse, & a raspberry gelée. I had some technical challenges constructing the tower you didn’t really get to see in the episode, so it fell short of my expectations. But my bars were a huge hit, and Chef Anna called them, “An outstanding dessert!”

In the final presentations, it’s just you and the judges. Backstage, we waited while the other finalists received their critique, not knowing what was being said. @ibake.the.bakery , @phatkakes_ , and I chose to enter the kitchen for the last time together, hand-in-hand. Whatever the judges decided, it felt great knowing someone you love, support and admire was about to be crowned champion.

Congratulations to GCS Season 4 Champion, @ibake.the.bakery!! My right ear is still recovering from the shout you let out when they called your name! I am so proud of you and cannot wait to visit your bakery one day.

✨🍫Great Chocolate Showdown Finale Recap Part 2: Chapters 1 & 2💜✨

First of all, how cute were little animated drawings of our bakes!?

Our first dessert was an elevated version of one of our first bakes ever. Shortly after I started baking, I baked a gingerbread house for Patrick and me to decorate. To zhuzh it up for the finale, my house chocolate gingerbread house had sharp angles and was decorated with tempered chocolate shingles and isomalt ‘stained glass’ windows. I also added little white chocolate bonbon “bushes” filled with a pumpkin pie ganache using a recipe I created myself. The overall feedback from the judges was very positive. They loved my use of chocolate and the flavor of my bonbons. Chef Steve fairly commented that I need to work on my capping, which is the part where we apply chocolate which will eventually be the bottom of the candy, as mine was too thick.

Our second task was to dedicate a dessert to a loved one. My father and Patrick both loved Boston cream donuts, and I wanted to honor both of them just as I had attempted during the cakescape challenge in episode 1.

To show the judges other baking skills from my first dessert, I decided to create a Boston cream Paris-Brest. Normally, a P-B is cut in half and served with almond praline cream. For mine, I wanted to keep the pastry intact, fill it with pastry cream similar to the beloved donut, and then pipe a dark chocolate ganache on top, completed with a rainbow-colored tempered chocolate ring.

Pastry cream thicken via heating, but if you’re not careful, you can overheat it and essentially scramble the egg in it. Unfortunately, I didn’t heat mine long enough, and it kept running out of the small holes I had made as I was piping it. With so much left to do, I didn’t have time to reheat and cool it, and had to serve it hoping some of the filling remained. Ultimately, while the judges liked the presentation and flavors of my Boston cream Paris-Brests, the desserts were nearly void of the pastry cream.

Great Chocolate Showdown Season 4 FINALE post!!!!!!!!! If you haven’t watched by now, we are no longer friends!

Kidding, but there are definitely some huge spoilers ahead so go watch it already!!!

✨🍫Part One: The Final Challenge💜✨

For our final challenge, the judges asked us to tell our baking story in 4 dessert chapters:

1. Humble beginnings- present an elevated version of one of the first things we ever baked

2. Sweet Tribute - bake a dessert dedicated to someone we love

3. Judge’s Choice - complete a bake determined by the judges that would directly challenge our baking weaknesses

4. Showpiece Dessert - create a dessert and present it in a way that shows the future direction of our baking journey

Oh, and btw please do all of that in just 7 hours! I’m sorry, what?!

But fortunately the judges had one final trick up their sleeve: they surprised us by inviting back the champions from GCS Seasons 1-3, @caseyhbakes, @sweettoothcc and @littlemauifamily to help each of us!!

Picking chocolate bars at random, I got paired with Latice. Before I say anything else, I want to thank her from the bottom of my heart because this challenge would have been physically and emotionally impossible without her. Latice, I am so grateful not only for your invaluable help, but your encouragement and support kept me going even when I faced some setbacks. Thank you so, so much ❤️

My strategy for the finale was simple: show the judges EVERYTHING and more. Each dessert would be elevated and unique, showcasing different baking and chocolatiering skills. I didn’t want to play it safe for a single chapter of my story, and I would even show skills they had yet to see. The judges needed to be reminded one more time I am a confident, creative, multitalented baker, and I deserve to be crowned the champion of Season 4.

Come back tomorrow for ✨🍫Part Two: Chapters 1 & 2💜✨

In the summer of 2022, I saw my phone ring and it was a Canadian number. When I answered and heard @jenprattvisser I knew EXACTLY what she was going to ask! Don’t know how…but I did. And when the people who helped change your life ask if you’ll go back to set, you say Yes!! I was JUMPING up and down and so excited to be able to wear my victory rolls once more!
.
One of the coolest parts about getting to back to GCS was seeing so many familiar faces! And since I wasn’t actually competing this time all the interactions were so chill.
.
@littlemauifamily and @sweettoothcc used every opportunity to pull out our cameras and take photos like tourists. Glad we did!! When we going back???

Have you ever experienced revisiting a weird dream?
.
Going back to the set of GCS was just like that! Especially since it was the same, but also different. Right after season one filmed, the production company of the show moved to a whole building. and since we were season 1, there were some kinks they hadn’t worked out… like we literally threw dishes behind the set, now they have dish bins under the counters!!! WILD!!
.
Anyway… it was such an amazing time being back! It felt so amazing to finally meet season 2 and 3 winners, @littlemauifamily and @sweettoothcc in person! Loved being able to act like giant doofuses with you two!
.
.
And cheers to new friends, @mikebakescake , @phatkakes_ and your season 4 winner, @ibake.the.bakery !! ya’ll did such a fantastic job!!!
