Pumpkin Raviolis - activated charcoal pasta dough, pumpkin & ricotta filling, toasted pine nuts, crispy prosciutto, cranberry gel, comté cheese, sage butter

How can you go wrong? A semi sweet filling with nutmeg, cinnamon, pumpkin, and ricotta. The dough was perfected by @chef_2knives. Harder than you think due to charcoal playing with moisture content but it is delicious! The nuts and the prosciutto add the perfect crunch texture. Comté cheese melts onto the raviolis from their residual heat coming out of the boil. The cranberry gel smooths everything out and is a nice slight acidity to the dish. Sage butter is the perfect match for the season. @breadking1 they're BACK IN BLACK! You only had to wait a year 🤣😭!

Crispy Duck Confit - cast iron seared duck leg confit, warm waffle, orange gel, cinnamon mascarpone, maple syrup

That is my version of perfection. Duck Confit is in my top without question. This dish kind of plays on both Chinese and French flavors but not literally. There are hints like the confit in general being French and the orange gel resembling duck à l'orange. The cinnamon in the mascarpone mixed with the duck will remind you of Chinese 5 spice powder on peking duck. I always have and always will pair all my duck with something sweet and mostly dessert related because that's what it deserves. I've had many people (employees & customers) try duck for the first time with this dish in particular. They were blown away. Believe me when I say this dish is solid YELLOW GOLD!

Cantonese Clams - manila clams, lo mein noodles, ginger, scallion, shaoxing wine, garlic, fermented black bean sauce

My wife welcomed me to this dish a decade ago and I've been deeply in love since. In fact, I eat fermented black bean a lot. My mother-in-law once said, "come with me" when I was in New York. She says that I just go. I landed in the basement of a restaurant eating live eel with black bean. A CORE memory. The sauce on these is very authentic. What isn't authentic? It does not normally come with fresh lo mein. I honestly thought that would just be a nice touch. As I sit in the airport on my way to NY (ironically) posting this I'm just reminded how much food controls me, moves me, inspires me, etc. I will eat dishes like this EVERYWHERE I go!

Lamb Chop "Milanese" - rack of lamb cutlet, wild red arugula, pickled shallot, sliced lardo, minted pea purée, green goddess dressing

WARNING. This is an appetizer. A two bone rack of lamb pounded thin and fried crispy. An idea I've been trying to execute for a long time. Here it is. Obviously you need a touch of mint which is where the peas play their part. The lardo is sliced so thin that it melts onto the hot fried cutlet. The shallot cuts the fat in the dish and the green goddess lightens it ever so slightly. You'll have to trust me, one bite and THE MEMORY REMAINS!
