Been a whirlwind couple of weeks! Here’s a recap:

It doesn’t look like much, but the hours involved was very much worth it to surprise my mom. Grateful for the good company, fantastic feast, and all the laughs.

Thanksgiving in October Menu:
🥕 Crudite platter: hummus, babaganoush, muhammara

🦃 Easy no fuss Thanksgiving turkey
No dry, sad turkey. And as promised easy. Win, win. Recipe from @tastesbetterfromscratch .

🥔 Make ahead roasted garlic mashed potatoes
Make ahead is key especially when you’re cooking solo. Really enjoyed this but will up the garlic next time for preference. Recipe from @halfbakedharvest .

🍞 Our favorite buttery herb stuffing
This is my go to recipe. I start preparing days ahead by baking and drying the bread. So herby. So delicious. Recipe is from @tastesbetterfromscratch .

🌽 Corn on the cob
My mom is obsessed with the corn @storyfarmscatskill so this had to happen. I soak an hour before, a tip that I learned from @marthastewart48 , and let my griller do the cooking.

🥬 Grilled brussel sprouts
Because we love our veggies and the farm stand had sprouts on the stalk.

🍄‍🟫Vegetarian mushroom thyme gravy
A recipe that I discovered when I was trying to create some vegetarian friendly options for my sister, prior to her transition to vegan. Wish she was still with us to enjoy it. Absolutely love this gravy. Recipe from @food52.

🎃 pumpkin cheesecake
Great use of my homemade pumpkin purée. Bake time was longer than written but otherwise looked perfect out of the oven… after 15mins or so during cooling a crack spontaneously happened. Based on reviews the original recipe was modified and other cooks experienced this issue. Happy to report that the flavor did not suffer whatsoever. Mom approved. Recipe from @natashaskitchen .

Lettuce wraps at home because going out requires putting on real clothes 🫠🥬

P.F. Chang’s copycat lettuce wraps from @tastesbetterfromscratch ! Here’s how to make them 👇

Chicken: Mix 1 lb ground chicken with 1 tbsp soy sauce, 1 tbsp rice vinegar & 1 tsp sesame oil. Set aside while you chop your veggies.

🥣 Sauce: Whisk together 5 tbsp low-sodium soy sauce, 2 tbsp rice vinegar, 2 tsp sugar, 2 tsp sesame oil, 2 tbsp hoisin sauce & 1 tsp cornstarch.

🍗 Chicken: Mix 1 lb ground chicken with 1 tbsp soy sauce, 1 tbsp rice vinegar & 1 tsp sesame oil. Set aside while you chop your veggies.

🫑 Cook: Heat 1 tbsp olive oil in a large skillet. Add chicken and cook, breaking it apart. Add 1 finely chopped red bell pepper, 2 chopped green onions, 2 tsp minced fresh ginger & 1 cup chopped water chestnuts. Cook another 1–2 minutes.

🥬 Finish: Pour in your sauce and simmer over medium heat, stirring until thickened and the chicken is cooked through. Spoon into Bibb or romaine lettuce leaves & top with sriracha if you like some heat!

only 4 ingredients and actually so easy 🍜

Ingredients:
• 2 eggs
• 2 tbsp milk
• 3/4 tsp salt
• 1½–2 cups flour

1. Whisk eggs, milk and salt together
2. Mix in 1 cup flour, then gradually add more until a slightly sticky dough forms
3. Knead on a floured surface for 3–5 minutes. Let rest for 10 minutes
4. Roll dough out thin, slice into strips, and add directly to simmering soup 🍲 cook until tender !!

A few Sundays ago we wanted a quick and easy but delicious breakfast and landed on these German pancakes (aka Dutch baby) and these did not disappoint. Instead of syrup we made a simple blueberry compote. The final result…absolutely delicious and cannot wait to make them again.

easy one-bowl skillet chocolate chip cookie. recipe👇  no mixer, just a whisk. big enough to share. technically.

170 g butter, melted
200 g brown sugar
100 g white sugar
1 egg + 1 yolk
10 g vanilla
255 g flour
½ tsp salt
½ tsp baking soda
255 g chocolate chips

1. whisk the melted butter and sugars until glossy
2. whisk in the egg, yolk and vanilla
3. stir in the flour, salt and baking soda, then fold in the chips
4. press into a 10–12” skillet. bake at 325°F for 28–35 min, until just golden
5. rest 10 min, then dig in with ice cream

I may have put the icing on a bit too early, but I am so happy with how this turned out! Pumpkin cake, recipe from @tastesbetterfromscratch soo easy, and sooo good! I've never baked pumpkin anything before but I will definitely make it again.
